I may not be a dietician or nutritionist, but I know what works for my body. Starting a high-fiber, high-protein diet has been nothing short of life-changing for me! When I hit my target macros, I look and feel my best—and it’s recipes like this cottage cheese and egg flatbread that have helped me get there.
These egg and cottage cheese flatbreads sit at just 160 calories per serving, but are jam-packed with 20 grams of protein. That’s almost 17% of my daily goal—and that’s just the bread, not any of the yummy toppings I pile on! It’s also super low in carbs—just 4 grams per serving. While cottage cheese and eggs don’t have fiber, there are lots of ways to sneak it in.
Here are some of my favorite ways to tweak the macros:

- Even More Fiber: Alternatively, get creative with some fiber-ful sides like my stone fruit salad, apple arugula salad, maple roasted carrots or raw carrot salad, smashed broccoli parmesan, roasted cauliflower, fresh berries, or even plain apple slices (maybe with some caramel apple dip if you’ve got a sweet tooth?).
- More Protein: Since our cottage cheese and egg flatbread is already packing 20 grams, you’re well on your way to a pretty high-protein meal no matter what you add! That said, there are plenty of easy sandwich add-ons that are also high in protein. Ingredients & Substitutions
- Cottage Cheese – I like to use Daisy low-fat 2% cottage cheese, but feel free to swap in your favorite. Since we’re blending it up, it doesn’t matter if you go for small or large curds.
- Egg – I buy large eggs, but medium up to jumbo should work. If you have small eggs, use two.
- Minced Garlic – Because who doesn’t love an easy garlic bread recipe? Use fresh if you can, jarred minced garlic or frozen garlic paste cubes if you can’t!
- Italian Seasoning – One bottle, so many flavors. Feel free to use the salt-free seasoning blend of your choice.
- Salt & Black Pepper – The basics always brighten things up. Use fine sea salt or kosher salt and freshly cracked pepper for the best flavor.
- Olive Oil Spray – I love that nonstick sprays now give you heart-healthy options like olive oil and avocado oil—now you can be low-cal and still get the good fats! Alternatively, feel free to simply brush on some olive oil or make your own olive oil spritzer!

How To Make TikTok Viral Cottage Cheese Flatbread
Prep. Set the oven to 350 degrees. Line a baking sheet with parchment paper. Grease the parchment paper with olive oil spray.
Step 1: Blend. Add the cottage cheese, egg, minced garlic, Italian seasoning, salt, and black pepper to a blender. Blend until smooth.
Step 2: Pour the mixture onto the greased parchment paper and form a rectangular-shaped flatbread.
Step 3: Bake for 30 minutes, or until the flatbread has started to become golden brown and will hold its shape.
Step 4: Cool & Stuff. Remove from the oven. Let cool slightly, then add your sandwich ingredients. I like turkey, red onion, lettuce, and dijon mustard.
Step 5: Fold over the flatbread to keep all the yummies inside. Serve and enjoy!

- Dairy-Free – I haven’t tried it, but I’d imagine this recipe would work just as well with vegan cottage cheese!
- Savory Flavors – You know how you get a bunch of bread options at Subway? Let that inspire you here! Instead of Italian seasoning, try making your cottage cheese egg flatbread with everything but the bagel seasoning (you may need to omit the salt depending on your blend) to make breakfast wraps or smoked salmon wraps. Or, go zesty with some taco seasoning (again, check for added salt) to pair with Mexican tuna salad or your favorite taco fillings. You could also go more Japanese-inspired by using furikake, then fill with my tuna rice bowl toppers for a low-carb alternative!
- Sweet Flavors – When I think of flatbread, I think savory, but don’t let that stop you! Keep the egg and cottage cheese, but ditch the garlic, Italian seasoning, and black pepper. Instead, try flavoring your cottage cheese egg wraps with cinnamon sugar or a blend of your favorite warming spices with a bit of maple sugar or monkfruit. Freeze-dried fruit powders could also be fun!

- Low-Carb Tortilla Pizza – Swap in a flatbread for the tortilla in my favorite 5-minute after-school snack.
- Tuna Twist – Add an extra layer of high-protein goodness to my tuna lettuce wraps.
- Classic Sandwich – There are lots of sandwich options to choose from. Try making a lower-carb tunacado sandwich or go to town making an Italian grinder with cured meats, or keep it simple by loading on turkey, chicken, ham, cheese, lettuce, tomato, and/or your favorite condiments.
- Perfect Pairing – Try making a high-protein grilled cheese with tomato soup for a healthier take on comfort food.
- Tex-Mex Treats – Make a classic quesadilla by melting cheese on top and folding the flatbread over. Or, add even more protein with salsa chicken or pork carnitas.
- Go Sweet – Try making a cinnamon sugar-flavored cottage cheese flatbread, then load it up with chocolate hummus, fresh berries, and banana slices.

Storage & Reheating Instructions
While the recipe card below is for a single serving, you’re welcome to make a larger batch of cottage cheese flatbreads as meal prep. Simply multiply the ingredients by the number you want to make (you may need to use several baking sheets depending on how enthusiastic you get). Once baked,
- Allow the flatbreads to cool completely. You don’t want them to get soggy from condensation in their storage container!
- Once they’re room temp, separate them with pieces of parchment paper before placing in an airtight container.
- They should keep well in the fridge for up to 5 days.
- For longer storage, wrap the stack of parchment-separated flatbreads with foil or plastic wrap, then place in a freezer bag. Press all the air out that you can without smooshing them together. Label and date before freezing. They can be frozen for up to 2 months.
- To reheat cottage cheese flatbreads, either defrost overnight in the fridge, or warm directly from frozen. I recommend using either a toaster oven, oven, air fryer, or dry nonstick pan over medium-low heat. Microwaving will cause them to be tough and chewy.
FAQs
Nope! Those little curds have a different texture than say, mozzarella or cheddar. While they do soften a bit when heated, they don’t melt in the traditional sense.
Womp, womp! Sounds like you either A.) did not bake it for long enough—make sure it turns golden, B.) stored it in a container or bag before it was done cooling, so the steam created condensation in storage, or C.) you microwaved it. If it’s either an A or B issue, toss it back in the oven or toaster oven to crisp it back up! If it’s a C issue, I’m not sure there’s a fix. 😬
Healthy is one of those loaded words that can mean lots of things depending who you’re talking to. Since I’m not a nutritional professional, I can’t determine if they’ll be good for your particular diet needs. However, what I CAN say is that this viral flatbread with cottage cheese is super low-carb, relatively low-calorie, and high-protein, with a smattering of important nutrients like calcium, Vitamin D, Vitamin B12, and choline.
