Egg whites are a low calorie, low cholesterol, and high protein food! Great right!?
Well the only problem is … I think most of us think of them as nutritious, but not very delicious. Kind of boring and bland.
In my search for healthy, high-protein breakfasts, I have found that egg whites are always quite a popular component. There are simply here to stay!
So I went on a mission to make them taste as good as they are for you.
That is exactly what this Egg White & Veggie Frittata is! A morning meal that is both nutritious and delicious.
This breakfast recipe is colorful, flavorful, easy to make, and has 17 grams of protein per serving! It has deliciously golden edges, a fluffy center, and is perfect for meal prep or weekend brunch.
Plus it is gluten free, low carb, and a great option for weight loss!

This healthy meal calls for a handful of simple, healthy ingredients! Lots of fresh veggies, simple seasonings, and of course egg whites.
Ingredient Notes
- Egg Whites: This healthy breakfast is made with 2 cups of egg whites! They are a fabulous high protein, low calorie food.
- Vegetables: This dish is loaded with a vegetable blend that add delicious natural flavor. Add 1 red bell pepper, 1 yellow onion, 1/2 cup cherry tomatoes or grape tomatoes, and 2 cups fresh baby spinach leaves.
- Cottage Cheese: I love the addition of cottage cheese here. It makes the frittata fluffier, creamier, and adds so much flavor too! Add 1/2 cup.
- Olive Oil: You’ll need 1 tbsp olive oil to sauté the vegetables here and grease the skillet.
- Seasonings: Simple seasonings give this breakfast a delicious taste! You’ll need 1 1/2 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp pepper.
Substitutions & Additions
This tasty egg frittata is actually quite customizable! There are a bunch of substitutions and additions you could make for it to meet your personal preferences, tastes, or needs.
Cottage Cheese: I think cottage cheese would be best replaced with ricotta cheese here as it has a similar texture!
Extra Cheese: It would be a fabulous idea to add some extra cheese on top of this frittata. Cheddar cheese, parmesan cheese, mozzarella cheese, and feta cheese would all be great!
Seasonings: Feel free to add whatever extra seasonings you’d like to this dish. Perhaps Italian seasoning, red pepper flakes, or paprika.
Vegetables: You could totally swap in any of your favorite vegetables here! I think broccoli and asparagus would be great options.

How To Make This Recipe
This healthy egg frittata is super easy to make! It might seem fancy – and it definitely will look like it is – but it is actually anything but.
All you need to do is sauté, bake, and enjoy. The perfect quick breakfast full of delicious flavors!
Step By Step Instructions
Step 1: Set the oven to 375 degrees.
Step 2: Next add the egg whites, cottage cheese, garlic powder, salt, and pepper to a medium bowl. Whisk until evenly combined and slightly foamy.
Step 3: Then add the olive oil, red bell pepper, and onion to a large skillet on the stove over medium heat. Season with salt and black pepper. Sauté for about 5 minutes until soft.
Step 4: Add the fresh spinach and sauté for an additional 1-2 minutes until wilted.
Step 5: Pour the egg mixture into the skillet. Top with the halved cherry tomatoes.
Step 6: Cook the frittata on the stovetop over medium-high heat for about 5 minutes until the edges are cooked.
Step 7: Then move the skillet to the hot oven and cook for another 13-15 minutes until the center of the frittata is cooked through.
Step 8: Remove the frittata from the oven and allow to cool before cutting into. Garnish the top of the frittata with green onions.

Whisk the egg thoroughly until foamy and bubbly.
Add more spinach if you’d like! It shrinks down to barely anything and is so good for you.
Make sure the pan is evenly coated in olive oil before pouring the egg white mixture in! Otherwise it will stick.
Make sure to season to your liking.
Let the frittata cool thoroughly before cutting into. It needs to fully set!

I think the best kind to use in this recipe is a carton of liquid egg whites that you can purchase in the grocery store. So easy!
You could also use whole eggs if you would like. Simply separate the egg yolks from the whites.
I love to serve this recipe with some breakfast sausage and toast for a well rounded, satisfying breakfast.
You could top the frittata slices with some tasty condiments or ingredients for extra flavor too. Like hot sauce, ketchup, or avocado!
You can store this recipe in an airtight container in the refrigerator. It will keep best for 3 days!
My favorite way to reheat this recipe is in the microwave. Just heat for 1-2 minutes depending on the serving size!
I think a toaster oven would be a great option too.
