I am a breakfast lover. I truly believe it is the most important meal of the day! It can never be skipped and it has to be delicious. But I also like to sleep in.
So having a healthy, satisfying, and yummy breakfast ready to go is the perfect solution! I can sleep soundly for another half hour knowing I won’t need that time to prepare my morning meal.
These Ham and Cheese Egg Cups are my favorite meal prep option! They’re sure to keep you full for hours, are perfect to grab & go on busy weekday mornings, and are incredibly easy to make.
In under 30 minutes and with only 3 simple ingredients you can have a great breakfast ready for the whole week. Or for the whole family, if you’re not meal prepping!
Ingredients needed…
These Cheese, Egg, and Ham Cups require only 3 simple ingredients! Plus salt, pepper, and green onion for lots of delicious flavor.
- Ham: You will need 12 slices of deli ham for the base of these cups! I love the salty delicious flavor it provides.
- Eggs: 12 large eggs are also used in this recipe.
- Mozzarella Cheese: These cheese egg muffins are of course made with cheese! 1/2 cup of mozzarella cheese is used here, but any kind would work.
- Salt & Pepper: Add salt and pepper to taste.
- Green Onions: Green onions are totally optional, but give these egg cups both a beautiful look and delicious taste!
Ingredient swaps & additions to Egg Breakfast Cups…
These breakfast egg cups are actually quite customizable! You can switch up the ingredients to meet your preferences and tastes.
Ham: The base of these egg muffins if of course slices of ham, but you could replace this with a different deli meat of your choice. Perhaps turkey or prosciutto!
Cheese: Mozzarella is used here, but pretty much any crumbled or shredded cheese can be swapped in! Swiss, feta, and cheddar cheese are all great options.
Herbs: Green onions add delicious flavor here in my opinion, but a fresh herb would add even more. Whichever ones you’d like!
Vegetables: A great addition to this easy breakfast would be vegetables! Throw in some cherry tomatoes or bell pepper.
Seasoning: Salt and pepper are the only seasonings this simple recipe calls for, but feel free to add in more. Like garlic powder, onion powder, or even red pepper flakes for some spice!
How to make Ham & Cheese Egg Cups…
This low-carb breakfast is super easy to make! All you need is less than 30 minutes to meal prep a healthy morning meal for the whole week.
Step 1: First set the oven to 375 degrees.
Step 2: Next lightly grease a muffin tin with cooking spray. Add the ham slices to the muffin tin. Divide the mozzarella cheese among the 12 cups and sprinkle on top each piece of ham. Then add the whole eggs on top of the cheese. Season with salt and black pepper.
Step 3: Bake for 15-18 minutes. Top with green onions and enjoy!

What ham should I use?
You can use any deli ham of your choice for this recipe. I recommend an averagely thick slice, not thin!
How long should I cook Ham & Egg Cups for?
This depends on what you would like the consistency of your eggs to be!
At the high end of the instructed time, 18 minutes, the egg whites will be fully cooked through and the egg yolk will be slightly jammy, but mostly cooked.
For a runnier yolk, cook for less time. Closer to or even less than 15 minutes! However, the egg whites will then also be less firm and cooked.
How to best serve this breakfast recipe?
I like to serve these egg muffins as is with a touch of extra cheese, hot sauce, salt, and pepper! It’s a scrumptious low carb breakfast.
You could also add some toast or fruit on the side for a more well rounded and filling meal.
How to reheat these egg muffin cups?
To reheat this recipe, simply pop in the microwave for 30-60 seconds depending on the serving size.
How to best store Ham and Cheese Egg Cups?
Store Ham and Cheese Egg Cups in an airtight container in the refrigerator. They should keep for about 1 week!
