Sweet Potato Veggie Egg Bake

Welcome to another easy and healthy make ahead breakfast recipe!! What can I say I love them and they just make my life so much easier. This make ahead breakfast is a little different though my friends! I am switching it up from my usual sweet breakfasts and recipes with this Sweet Potato Veggie Egg Bake. And let me tell you this switch up wouldn’t happen for just anything!! I am a sweet breakfast, honestly just sweet food, girl through and through so if I go savory it’s got to be for something good. This egg bake? Definitely good. Honestly, I would even say great!

What you need for this Sweet Potato Veggie Egg Bake!

This egg bake basically has four layers or elements to it. We’ve got Sweet potato, sauteed vegetables, eggs of course, and then saving the best for last, cheese! Remember when I said that I don’t switch to a savory breakfast easily? Well I can almost guarantee you that if I do make the switch, cheese will be involved. It just makes everything better, including this egg bake!

  • Sweet Potatoes: This is a sweet potato egg bake so you are definitely going to need sweet potatoes! They line the bottom of the bake and act almost like a crust. They also add a delicious flavor and some healthy carbs perfect for breakfast!
  • Veggies: You can honestly go with whatever vegetables you like or have around in this egg bake, but I used tomato, bell pepper, and onion.
  • Eggs: Pretty self explanatory!! This recipe uses six eggs.
  • Cheese: The cheese is similar to the vegetables in that fact that you could use whatever you like or have on hand. I used a mix of shredded cheddar and shredded parmesan and the combination was fantastic.
  • Olive Oil: Olive oil is used twice in this recipe. It is used to first bake the potatoes and also to sauté the vegetables! Feel free to swap this with the cooking oil of your choice.
  • Lastly some Garlic Powder, Salt, and Pepper for lots of flavor!

How to make this Sweet Potato Veggie Egg Bake!

  1. Set the oven to 400 degrees.
  2. Peel and cut the sweet potatoes into thin slices. About 1/4 in thick.
  3. Place the sweet potato slices in one layer in a pie dish. Drizzle with olive oil and season with salt and pepper.
  4. Bake for 25 minutes.
  5. While the potatoes are in the oven, chop the tomato, bell pepper, and onion.
  6. Sauté over medium heat with the olive oil, garlic powder, salt, and pepper until soft and fragrant.
  7. Remove the vegetables from the stove and set aside.
  8. In a separate bowl scramble the eggs, mix in 1/2 cup of the cheese, and add salt and pepper.
  9. Remove the sweet potatoes from the oven and spread the vegetables evenly on top. Then pour the egg mixture on and finally top with the remaining 1/4 cup of cheese.
  10. Bake for 13 minutes.
  11. Enjoy!

Sweet Potato Veggie Egg Bake

Ingredients

Scale
  • 6 eggs
  • 2 sweet potatoes
  • 1 bell pepper
  • 1/2 small onion
  • 1/2 cup chopped tomato
  • 3/4 cup parmesan & cheddar cheese (or one or the other!)
  • 2 tbsp olive oil (split up)
  • salt
  • pepper

Instructions
