Sweet Potato Veggie Egg Bake

Description

This easy & healthy Sweet Potato Veggie Egg Bake is one of my favorite make ahead breakfast recipes!  It is full of vegetables, loaded with cheesy deliciousness, and will make your life so much easier.  It’s a satisfying breakfast for the whole week!


Ingredients

Scale
  • 6 eggs
  • 2 sweet potatoes
  • 1 bell pepper
  • 1/2 small onion
  • 1/2 cup chopped tomato
  • 3/4 cup parmesan & cheddar cheese (or one or the other!)
  • 2 tbsp olive oil (split up)
  • salt
  • pepper

Instructions

  1. Set the oven to 400 degrees.
  2. Peel and cut the sweet potatoes into thin slices. About 1/4 in thick.
  3. Place the sweet potato slices in one layer in a greased pie dish. Drizzle with olive oil and season with salt and pepper.
  4. Bake for 25 minutes.
  5. While the potatoes are in the oven, chop the tomato, bell pepper, and onion.
  6. Sauté over medium heat with the olive oil, garlic powder, salt, and pepper until soft and fragrant.
  7. Remove the vegetables from the stove and set aside.
  8. In a separate bowl scramble the eggs, mix in 1/2 cup of the cheese, and add salt and pepper.
  9. Remove the sweet potatoes from the oven and spread the vegetables evenly on top. Then pour the egg mixture on and finally top with the remaining 1/4 cup of cheese.
  10. Bake for 13 minutes.
