Almond Butter Berry Overnight Oats

I am a lover of oats in any and all forms. I love stovetop oats, baked oatmeal, quick oats, oatmeal cookies, homemade granola, baking with oat flour, and of course these Almond Butter Berry Overnight Oats! These overnight oats are just about the quickest and easiest breakfast you could make. You just mix a few simple & healthy ingredients together, let sit in the fridge, and then have breakfast ready for a couple of days! Plus these overnight oats are an incredibly delicious, nutritious, and satisfying breakfast. They are bursting with berry flavor and have a delectably creamy texture from the almond butter.

What you need for these Almond Butter Berry Overnight Oats!

  • Greek Yogurt: The use of plain greek yogurt in this recipe gives the overnight oats such a creamy texture. It also adds a nice protein boost which I love!
  • Almond Butter: The almond butter adds to the creamy texture of the oats as well! It also provides such a delicious nutty flavor that I think works wonderfully with the berries. If you don’t have or don’t like almond butter you could replace this with peanut or cashew butter!
  • Honey: Honey is one of my favorite refined sugar free sweeteners and I especially love it with oats! The recipe only requires one tablespoon but it goes a long way and creates the perfect level of sweetness. You could also swap this with pure maple syrup or a different liquid sweetener of your choice.
  • Almond Milk: You could use any milk here, but my milk of choice is always unsweetened vanilla almond milk. If you don’t use vanilla milk, maybe add a little extra splash of vanilla to these oats!
  • Vanilla Extract: I loooove me some vanilla! I put it in all of my sweet recipes and these oats were definitely not an exception.
  • Oats: This overnight oats recipe obviously requires some oats! I used old fashioned in this recipe, but I believe quick oats would work as well. Additionally if you use certified gluten free oats this is a gluten free breakfast option!
  • Chia Seeds: Chia seeds are a magnificent little seed that have so much nutritional value! They are a great source of omega 3 fatty acids, antioxidants, and fiber. But they are mostly used in this recipe for their absorbing abilities! They absorb the liquid in these oats and thicken things up, resulting in the best texture.
  • Mixed Berries: I mean you can’t have berry oats without some berries! I used a mix of blackberries, blueberries, and raspberries but you could use any combination of berries you enjoy.
  • Chopped Almonds (Optional): I topped these overnight oats with some chopped almonds for a little crunch and more almond flavor, but they are not necessary!

How to make these Almond Butter Berry Overnight Oats!

  1. Combine the greek yogurt, almond butter, honey, vanilla extract, and almond milk until smooth.
  2. Then add in the oats, chia seeds, and berries and combine again.
  3. Let sit in the fridge overnight or for a few hours.
  4. Mash up the berries for the berry layer. If you are not keeping these in a jar you can just put some of the mashed berries over the oats in a bowl or even mix them right into the oats! Also if you want this breakfast to be completely ready for you in the morning you could add the mashed berry layer before placing in the fridge overnight.
  5. Then top with whatever you like! I suggest more berries, almond butter, a drizzle of honey, and chopped almonds.
  6. Enjoy!

How many servings are in this overnight oats recipe?

I put this whole recipe into one jar for the photos, but it actually makes two or maybe even three servings. This would depend on how hungry you are, the size of your typical breakfast, and also how many toppings you add! I love this about this recipe because it stays so well in the fridge, so you can make it once and have breakfast ready to go for a couple of days. Or you could even double the recipe and have breakfast ready for a whole week!

Could I make any ingredient swaps in this recipe?

This is actually another thing that I love about this overnight oats recipe. It is super super customizable! You could swap the honey for pure maple syrup, the mixed berries for your favorite fruit, and the almond butter for cashew or peanut butter. You can totally just make this recipe with whatever you have on hand and enjoy! The base of the recipe with the yogurt, oats, milk, etc. would always stay the same and then the little changes I mentioned above will just affect the flavor of the oats.

Oats

  • 1/2 cup greek yogurt

    Absolutely the best and easiest overnight oat recipe that I’ve come across! I always modify the recipes a little to work with that I have, but these were the best ones I’ve made yet!!
