Egg White Frittata with Spinach

Egg White Frittata is an easy, healthy, and high protein breakfast recipe! Ingredients

  • 1 tbsp olive oil
  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 1/2 cup halved cherry tomatoes
  • 2 cups fresh spinach
  • 2 cups egg whites
  • 1/2 cup cottage cheese
  • 1 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Green onions

Instructions

  1. Set the oven to 375 degrees.
  2. Next add the egg whites, cottage cheese, garlic powder, salt, and pepper to a medium bowl.  Whisk until evenly combined and slightly foamy.
  3. Then add the olive oil, bell pepper, and onion to a large skillet on the stove over medium heat.  Season with salt and pepper. Sauté for about 5 minutes until soft.
  4. Add the spinach and sauté for an additional 1-2 minutes until wilted.
  5. Pour the egg mixture into the skillet.  Top with the halved tomatoes.
  6. Cook the frittata on the stovetop over medium-high heat for about 5 minutes until the edges are cooked.
  7. Then move the skillet to the hot oven and cook for another 13-15 minutes.
  8. Remove the frittata from the oven and allow to cool before cutting into.  Garnish with green onions.
  9. Serve and enjoy!
