This overnight s’mores oatmeal recipe calls for only a handful of simple ingredients! Mainly pantry staples, all your oatmeal basics, and one of life’s best trios – marshmallows, chocolate, and graham crackers.

They come together to make a luxuriously smooth, creamy, rich, and delicious breakfast recipe that truly tastes like dessert. Like truly!

Here’s the short list of ingredients you’ll need to grab to make this quick breakfast:

  • Oats: The base of this s’mores oats recipe is old fashioned rolled oats. Add 1/3 cup oats.
  • Greek Yogurt: You’ll also need 1/3 cup plain greek yogurt. This gives the overnight oats a perfectly creamy texture and a boost of protein.
  • Almond Milk: The liquid used here is vanilla unsweetened almond milk. But 1/2 cup of any milk will work! You could swap in soy milk, coconut milk, oat milk, or even classic dairy milk.
  • Chia Seeds: 2 tsp chia seeds are added to this oatmeal mixture. Chia seeds are packed with fiber and omega-3 fatty acids. They also help thicken up the mix!
  • Marshmallow Cream: This is going to sound crazy, but I recently discovered marshmallow cream. Or fluff! I never had it growing up and now I know I was majorly missing out. Anyway 2 tbsp marshmallow cream serves a double purpose here. It adds a wonderful level of sweetness and the perfect marshmallow flavor. I’m obsessed!
  • Graham Crackers: Graham cracker crumbs also add to that tasty s’mores flavor. Use 1/2 a large sheet or however much you’d like.
  • Chocolate Chips: The last element of the s’mores trifecta is of course chocolate! I used 1/2 tbsp mini semi sweet chocolate chips to incorporate it thoroughly and evenly into the oatmeal. But you could alternatively use a milk chocolate or dark chocolate bar!
  • Mini Marshmallows: Lastly, to put the s’mores flavor over the edge you can top your overnight oatmeal with mini marshmallows the next morning. It adds some ooey-gooey deliciousness!

How To Make S’mores Overnight Oats

S’mores oatmeal is incredibly easy to make! All you need to do is mix, soak, and enjoy.

Step 1: Combine wet ingredients. Add the wet ingredients to a small mixing bowl – plain greek yogurt, almond milk, and marshmallow cream.  Whisk to combine thoroughly.

Step 2: Add in dry ingredients. Then add the dry ingredients – old fashioned oats, chia seeds, crumbled graham crackers, and mini chocolate chips.  Combine.

Step 3: Soak overnight. Transfer the oatmeal mixture to an airtight container. Place in the refrigerator to soak overnight or at least for a few hours.

Step 4: Add toppings. Remove from the fridge the next day.  Top with extra mini marshmallows, chocolate chips, and graham cracker pieces.

Optional Variations & Dietary Adaptions

This fun breakfast is absolutely perfect as is in my opinion! But of course I want it to be perfect for you too. Here are some adaptions and adjustments you can make to these oats for them to meet your needs. Or wants!

  • Gluten Free: It is actually very easy to turn this delicious recipe gluten free. Just ensure you use certified gluten-free oats and swap in a gluten free graham cracker alternative.
  • Vegan: Follow a vegan diet but still want to try out this breakfast treat? No problem! Swap in a plant based yogurt, dairy free chocolate chips, and use vegan marshmallows. I’m not quite sure if plant based or vegan marshmallow cream is sold in the grocery store but here is a recipe for homemade vegan marshmallow fluff! Or you could follow the tip below for what to do if you can’t / don’t want to use the ingredient.
  • No Marshmallow Cream: If marshmallow cream is not your thing, just replace it with 1-2 tbsp of pure maple syrup or honey for sweetness. This will not replace the delicious marshmallow flavor though!
  • More Protein: Feeling like these oats need a protein boost? You can easily mix in some protein powder. I think vanilla would work best, but I know some brands, like Clean Simple Eats (use the code KAYLA10 for 10% off), even have s’mores protein powder. YUM. If you do add this, make sure to add extra liquid too.

Expert Tips

  • This recipe makes one serving, but you could totally prep a big batch so you’ll have breakfast ready for the whole week. I mean who doesn’t want to wake up to this marshmallow, chocolatey, graham cracker goodness? It would get me right out of bed.
  • Marshmallow cream!!! This isn’t necessarily a tip, but oh my gosh it is so good. You need to run to the grocery store, get it, and eat it by the spoonful. Then make this fantastic breakfast with it! I’ve also been loving it in my morning coffee – its sweet, creamy, vanilla perfection. Also yes, this is the same thing as Fluff, but when I call it marshmallow cream it just seems more elegant and fancy. Here is the exact kind I used in this recipe!
  • I mix the graham crackers straight into the oatmeal before soaking. This does make the cracker pieces a bit mushy, but really gets the flavor throughout the recipe. If you don’t want any mushiness, just add the graham cracker on top after soaking.
  • Can’t get enough of s’mores? Add S’mores Granola on top of these oats for the ultimate campfire concoction.

Are these overnight oats healthy?

First of all, I am not a dietician or nutritionist so do not take my word as truth. In my opinion these overnight oats are not a super healthy breakfast, but not necessarily an unhealthy one. They are somewhere in between!

They are of course loaded with sweets that are more commonly found in dessert – chocolate chips, marshmallows, and graham crackers.

However, they also have some very nutritious ingredients! Old fashioned oats provide complex carbohydrates, greek yogurt adds a protein punch, and chia seeds add fiber and omega-3 fatty acids.

Plus the fun breakfast recipe is still pretty low calorie and high protein! It has a total of 311 calories and 14g of protein. Plus whatever toppings you decide to add or not add.

All in all, I think these overnight oats are relatively healthy. They’re perfect if you’re looking for a good-for-you breakfast, but one that still gets you excited and does not skimp on flavor.

How long do overnight oats have to soak for?

Overnight oats should soak overnight! But if you’re in a rush or pressed for time I think a few hours will work. Perhaps 2-3 hours.

Do you eat overnight oats cold or hot?

I personally eat overnight oats cold! I believe that is how they are intended to be enjoyed.

However, I think if you would prefer to eat them hot you absolutely could! Simply pop in the microwave or warm them up on the stovetop.

I just don’t like the idea of warm yogurt. Since greek yogurt is a main element of this recipe, it is a no for me.

Can I meal prep this recipe?

Yes, absolutely! Overnight oats are the quintessential meal prep, make ahead breakfast recipe. Probably because you literally have to prep them ahead of time and let them soak for a few hours.

I recommend preparing multiple single servings of this recipe and storing for the week in mason jars, or the container of your choice, as a grab & go morning meal. It is both functional and cute!
