S’mores Dessert Granola
I am going to be completely honest with you guys … I have no idea if dessert granola exists. Absolutely no clue if it’s a thing! But I am without a doubt making it one. I had the idea for a s’mores granola, but kind of struggled with the name because it’s not your typical granola. It is loaded with delicious graham crackers, chocolate chips, and marshmallows and actually tastes like a s’more in every bite. So it isn’t really for breakfast and for topping a yogurt bowl … it’s more of a sweet & snacky granola that would go wonderfully on top of ice cream. So I came up with S’mores Dessert Granola … and I think it describes it perfectly !!!!
The key to a good homemade granola is beautifully crispy and crunchy chunks. And let me tell you about this granola! SO crispy, SO crunchy, and SO chunky. Like seriously I was a little shocked at how good these granola chunks turned out! They are like little bite sized s’mores that just melt in your mouth. Literally perfection.
What you need for this S’mores Dessert Granola!
- Oats: Oats along with some graham crackers are the base of this granola. I recommend using old fashioned!
- Graham Crackers: This is where the fun s’mores part comes in. Most granolas simply have oats as the base and maybe a few nuts or seeds, but this granola has crushed graham crackers. They are so delicious in this granola and really help the s’mores flavor shine through!
- Chocolate Chips: Of course we need chocolate in a s’mores recipe! I love to use dairy free semi sweet mini chocolate chips, but you could totally use any that you have on hand and enjoy. You could also chop up a chocolate bar!
- Marshmallows: Another necessary ingredient for a s’mores recipe. I just used the classic marshmallows, but there are definitely healthier options out there if you are interested. I also used the mini ones, but you could chop up the regular sized ones as well.
- Refined Coconut Oil: Coconut oil was my oil of choice in this granola, but you could also use avocado or olive oil! If you do use coconut oil, make sure it is refined because unrefined tastes like coconut and will leave your granola tasting like coconut too.
- Pure Maple Syrup: If you have read any of my other blog posts or made any of my recipes, you know I love pure maple syrup! Pure maple syrup and coconut sugar are my favorite refined sugar free sweeteners to use. However, you could swap this with another liquid sweetener such as honey, date syrup, or agave nectar.
- Vanilla Extract: I also loooove vanilla extract. I put it in all my sweet recipes because I just love the flavor of vanilla! I think it helps to enhance the rest of the flavors in a recipe as well.
- Salt: Pretty simple, you always gotta have salt!
How to make this S’mores Dessert Granola!
- Set the oven to 325 degrees.
- Crush the graham crackers. Leave some bigger chunks, you do not want it to be super finely crushed. I did this by putting a few of the crackers in a plastic bag and smashing it with a spoon … it works perfectly!
- On the stove over low heat combine the coconut oil, maple syrup, and vanilla extract.
- In a large bowl combine the crushed graham crackers, oats, and salt.
- Pour the liquid mixture over the oat & graham cracker mixture and combine. Coat everything evenly with the liquid.
- Pour the mixture onto a parchment paper lined baking tray and flatten it out super thin … the thinner it is, the crispier your chunks will be. The mixture doesn’t completely stick together, but try and keep everything as together as possible.
- Bake for 13 minutes.
- Remove from the oven and sprinkle the chocolate chips and marshmallows evenly on top.
- Bake for another 3 minutes.
- Broil on high for 1 -2 minutes to brown the marshmallows. Keep an eye on it so that it doesn’t burn!
- Remove from the oven and let cool completely before touching. This also ensures your granola will be crispy!
- Once it has cooled completely you can break into chunks and enjoy!

Hey love the recipe. Just wondering, how does the marshmallow keep when storing this? Also can i only use oats without the graham crackers?

Thanks! It keeps well for about a week! I haven’t tested, but I’m sure you could just use oats.
