S’mores Dessert Granola

This S’mores Dessert Granola is such a fun spin on the classic summer treat!  It is super easy to make, has the taste of s’mores in every melt-in-your-mouth bite, and is sure to be a fan favorite.

  • 1 cup crushed graham crackers
  • 1 cup oats
  • 1/4 cup refined coconut oil
  • 2 tbsp pure maple syrup
  • 2 tbsp chocolate chips
  • 1/4 cup mini marshmallows
  • 1 tsp vanilla extract
  • 1/8 tsp salt

Instructions

  1. Set the oven to 325 degrees.
  2. Crush the graham crackers. Leave some bigger chunks, you do not want it to be super finely crushed. I did this by putting a few of the crackers in a plastic bag and smashing it with a spoon … it works perfectly!
  3. On the stove over low heat combine the coconut oil, maple syrup, and vanilla extract.
  4. In a large bowl combine the crushed graham crackers, oats, and salt.
  5. Pour the liquid mixture over the oat & graham cracker mixture and combine. Coat everything evenly with the liquid.
  6. Pour the mixture onto a parchment paper lined baking tray and flatten it out super thin … the thinner it is, the crispier your chunks will be. The mixture doesn’t completely stick together, but try and keep everything as together as possible.
  7. Bake for 13 minutes.
  8. Remove from the oven and sprinkle the chocolate chips and marshmallows evenly on top.
  9. Bake for another 3 minutes.
  10. Broil on high for 1 -2 minutes to brown the marshmallows. Keep an eye on it so that it doesn’t burn!
  11. Remove from the oven and let cool completely before touching. This also ensures your granola will be crispy!
  12. Once it has cooled completely you can break into chunks and enjoy!
