S’mores Brownies

Summer equals s’mores and s’mores equals summer. At least for me! There is just nothing better than a bonfire on a summer night complete with a delicious s’mores in hand. I was inspired by the classic summertime treat, to create these S’mores Brownies. They are everything a brownie should be and more! I’m talking fudgy, gooey, rich, messy, decadent, and absolutely loaded with chocolate. I mean is there anything more you could want?

These S’more Brownies have a buttery graham cracker crust, a gooey brownie middle, and a toasted marshmallow top. They are pretty much the ultimate brownie and trust me they will leave everyone wanting s’more! I know … corny joke, but it’s the truth and I had to do it.

What are S’mores?

I’m sure we all know what s’mores are … but let’s go over it again! The classic summertime, bonfire treat … crispy graham crackers, melted chocolate, and toasted gooey marshmallows. They are absolutely delicious and there is no wonder why they’re pretty much America’s favorite treat!

Ingredients needed for S’mores Brownies…

For these brownies you basically need your classic brownie ingredients plus your classic s’mores ingredients! Combine the two and all your dessert dreams will come true.

  • Graham Crackers: Gotta have graham crackers for s’mores my friends! They’re used in the delicious graham crust of these decadent brownies. You will need 1 1/2 cups of crushed graham crackers!
  • Marshmallows: 1 1/2 cups of mini marshmallows make these brownies ooey, goeey, and delicious!
  • Butter: Good old butter is used throughout this entire dessert! Add 6 tbsp to the graham cracker crust and 1/2 cup to the brownie batter.
  • Chocolate Chips: Melted semi sweet chocolate chips make these brownies extra rich and fudgy! 1 cup is the perfect amount.
  • Sugar: You will need both white and brown sugar in this recipe! Add 2/3 cup of white sugar to the brownie batter and 1/4 cup of brown sugar to the graham cracker crust.
  • All Purpose Flour: These decadent brownies call for 1/4 cup + 2 tbsp of all purpose flour!
  • Cocoa Powder: To make this treat perfectly chocolatey, add 1/4 cup of cocoa powder.
  • Eggs: Add 2 eggs to this brownie batter for binding and moisture!
  • Vanilla Extract: 1/2 tsp of vanilla extract gives these brownies that classic taste we all know and love.
  • Baking Powder: To bake these brownies to perfection add 1/2 tsp of baking powder!
  • Salt: 1/4 tsp of salt balances out all the sweet in this delicious treat.

And that’s all you need for these decadently delicious S’mores Brownies!

How to make S’mores Brownies…

These layered s’mores brownies take a little extra effort to make, but trust me they will be a labor of love! The effort will be totally worth it once you have this perfect summer dessert ready to devour on your table. It’s ooey-gooey brownie perfection!

  1. Set the oven to 350 degrees.
  2. Start by crushing your graham crackers.  I recommend doing this by placing the crackers in a plastic bag and hitting with a spoon until fine.
  3. Add 1 1/2 cups of crushed graham crackers to a bowl with the butter and brown sugar.  Mix until a crumbly mixture forms.
  4. Transfer the graham cracker mixture to a parchment paper lined 8×8 baking dish and flatten.
  5. Bake for 8 minutes.
  6. While the graham cracker crust is in the oven, begin working on the brownie batter.  Start by melting the chocolate chips and butter.
  7. Add the melted butter and chocolate to a large mixing bowl and combine until smooth.  Add in the eggs, sugar, and vanilla extract.  Combine again.
  8. Next add the cocoa powder, flour, baking powder, and salt and mix until smooth.  
  9. Remove the graham cracker crust from the oven and pour the brownie batter on top.  Spread evenly.
  10. Bake for 30 minutes.
  11. Remove the brownies from the oven and add the mini marshmallows on top.
  12. Place back in the oven and bake for another 13-15 minutes.  Make sure to keep an eye on the marshmallows to prevent them from burning.
  13. Remove from the oven and let cool completely.
  14. Cut into squares & enjoy!

Tips & tricks for the perfect S’mores Brownies…

These brownies were a little tricky to nail down, but after three attempts I have all the secrets for the perfect brownies. They’ll come out fudgy and delicious each and every time!

  • The perfect graham cracker crust! I have a few tips for you to make the perfect graham cracker crust for your s’mores brownies. First, for the perfect crushed graham crackers add them to a bag and whack with a spoon. It’s honestly fun and an easy way to crush your crackers until fine! My second tip for the perfect crust is to add extra melted butter if needed. A good way to check if your crust is good to go, is if the crust mixture holds together when you squeeze it in your hand!
  • Don’t burn the marshmallows! Trust me, you want to keep an eye on your marshmallows. My first attempt at these brownies resulted in burnt marshmallows, which was very sad. Bake these brownies as the instructions describe for perfectly toasted & golden marshmallows!
  • Cool completely! This is very very important. These triple layered brownies have a lot going on and could fall apart if you cut into them before they have cooled completely! They will still be a little messy no matter what, but cooling these brownies helps to set them and really keep their form.
  • Use parchment paper! Lining the baking dish with parchment paper makes for such easy removal of these brownies. You just grab the paper and lift to remove the brownies from the pan with minimal mess and effort! Easy peasy lemon squeezy!

How to store S’mores Brownies…

You can store these brownies on the counter in an airtight container for about 5 days! If you want to keep these fudgy brownies fresh for longer, I recommend storing in the refrigerator in an airtight container. These will keep for 1-2 weeks in the fridge!
