Healthy Birthday Cake Blondies
At the age of twenty, sprinkles still excite me. I don’t know about you guys, but when my dessert has sprinkles in it the dessert tastes 100% more delicious. These Healthy Birthday Cake Blondies are inspired by my love of sprinkles … and of course my love for all things birthday cake. Now I do enjoy birthday cake itself, but something about a different type of treat that is birthday cake flavored just hits! You know??
And these birthday cake or cake batter or funfetti blondies or whatever else you would like to call them are my new favorite! They are all the things a blondie should be. Perfectly soft, gooey in the middle, fudgy all the way throughout and of course loaded with my favorite … rainbow sprinkles. And my other favorite too … white chocolate! This simple celebratory sweet is absolutely perfect for any party!
What are blondies?
We all know about brownies, but do you know about blondies? I’m sure you do, but if you don’t let me introduce you to them! They are the chocolate brownie’s vanilla counterpart. And yes they are as delicious as they sound!
Blondies still have that chewy, gooey, and fudgy texture that we all know and love in brownies. But they don’t have the cocoa powder and instead typically emphasize a rich vanilla flavor! Blondies are also known to have super fun mix ins. There’s the classic chocolate chip, but there’s also nuts, caramel, or even different fruits!
But I have to say my personal favorite is the festive rainbow sprinkles and sweet & creamy white chocolate chips in these Healthy Birthday Cake Blondies. It’s the simple the best!
Ingredients needed for Healthy Birthday Cake Blondies…
These fudgy birthday cake blondies call for mainly healthy, wholesome, and simple ingredients! You even probably already have most of them on hand. They make for a lightened-up cake batter treat that is gluten free, while still being perfectly rich and delicious!
- Cashew Butter: Cashew butter is the base of these healthy cake batter blondies! It provides a neutral flavor and a perfectly gooey texture. You’ll need 1/2 cup!
- Coconut Oil: Make sure to use refined coconut oil in this treat. Unrefined or virgin coconut oil tastes like coconuts and will make your blondies taste like coconut too! Add 1/4 cup of melted refined coconut oil.
- White Sugar: White sugar helps to give these blondies their blonde look. 1/2 cup is the perfect amount!
- Eggs: 2 eggs help to bind this recipe and also add the perfect moisture.
- Almond Flour: The use of almond flour in these healthy blondies makes them completely gluten free. Add 2/3 cup!
- Rainbow Sprinkles: Rainbow sprinkles make this recipe a fun & festive treat, perfect for any celebratory occasion! Measure with your heart with these.
- White Chocolate Chips: I love the flavor that sweet and creamy white chocolate adds to these birthday cake blondies. You will need 1/4 cup plus a little extra!
- Vanilla Extract: 2 tsp of vanilla extract helps to give this treat that classic birthday cake taste.
- Baking Powder: To bake these to perfection, add 1/4 tsp of baking powder!
- Salt: Lastly, 1/4 tsp of salt helps to balance out the delicious sweetness in these blondies.
How to make Healthy Birthday Cake Blondies…
To make these Healthy Birthday Cake Blondies you only need one bowl and about 30 minutes! They are super simple and the perfect easy party treat.
- Set the oven to 350 degrees.
- In a large mixing bowl combine the cashew butter, eggs, sugar, coconut oil, and vanilla extract until smooth.
- Next add the almond flour, baking powder, and salt. Mix to combine.
- Stir in 1 tbsp of the sprinkles and the 1/4 cup of white chocolate chips.
- Next transfer the blondie batter to a greased or lined 8×8 baking dish. Top with extra sprinkles and white chocolate chips.
- Bake for 20 minutes.
- Let cool, cut into squares, and enjoy!

How to best store cake batter blondies?
You can store these blondies in an airtight container on the counter for 3-5 days. If you want to keep them fresh for longer, I recommend storing in the refrigerator. They will keep in the fridge for 1-2 weeks!
You could even keep for a couple months in the freezer, but I don’t they will last that long.
Can I add any extra mix-ins?
Yes, of course! You can definitely add extra add-ins to these blondies or even make some swaps. My first thought is a different type of chocolate, like dark or semi-sweet in place of the white chocolate. But you can even go a totally different route and use this blondie base with nuts, fruit, dried fruit, caramel sauce, peanut butter swirls, etc. You could really go crazy!
Why are my healthy blondies dry?
Your blondies are most likely dry if you over baked them! Similarly, to a brownie or fresh chocolate chip cookie, these birthday cake blondies are most delicious when a little underdone and gooey in the middle. The designated baking time of 20 minutes leaves this perfect texture, even if your blondies seem a little underdone at first! They will bake a little more out of the oven and firm up a little once they’ve cooled.
