Healthy Birthday Cake Blondies

Healthy Birthday Cake Blondies are the perfect party treat!  Made with cashew butter, almond flour, and coconut oil these gluten free blondies are deliciously soft & fudgy, gooey in the middle, and super simple to make!  All you need is one bowl, 30 minutes, and rainbow sprinkles for this fun, festive, and easy cake batter treat.




  1. Set the oven to 350 degrees.
  2. In a large mixing bowl combine the cashew butter, eggs, sugar, coconut oil, and vanilla extract until smooth.
  3. Next add the almond flour, baking powder, and salt.  Mix to combine.
  4. Stir in 1 tbsp of the sprinkles and the 1/4 cup of white chocolate chips.
  5. Next transfer the blondie batter to a greased or lined 8×8 baking dish.  Top with extra sprinkles and white chocolate chips.
  6. Bake for 20 minutes.
  7. Let cool, cut into squares, and enjoy!
