Thick, Creamy, & Delicious Overnight Oats Recipe

I love cinnamon rolls. Like absolutely love them! I am drooling here just thinking about those jumbo ones from the mall. Good old Cinnabon!

There is just nothing better than a warm, ooey-gooey, cinnamony, delicious bun. Unfortunately I can’t eat one every morning for breakfast!

But I can eat Cinnamon Roll Overnight Oats for breakfast every morning.

Now I’m not going to sit here and tell you that this healthy oatmeal recipe tastes like an actual cinnamon roll. But it kind of sort of does! It most definitely has the same vibe.

This overnight oats recipe is made with old fashioned oats, greek yogurt, almond milk, brown sugar, and cinnamon. It is wonderfully creamy, thick, and delicious!

And thanks to the sweet, rich brown sugar and warm ground cinnamon those cinnamon roll flavors really do shine through.

Plus with only 5 minutes of prep required – this simple recipe truly is the perfect low effort, no cook, sweet treat breakfast!

Ingredients

These easy overnight oats only require a handful of simple ingredients! If you are a big oatmeal fan, you probably already have most of them on hand too.

Ingredient Notes

  • Oats: This recipe calls for one serving of the classic old fashioned rolled oats, 1/2 cup!
  • Almond Milk: I always use unsweetened vanilla almond milk in my oatmeal recipes. But any unsweetened nondairy milk should do! Add 1/2 cup.
  • Greek Yogurt: Greek yogurt gives this healthy breakfast a little bit of protein! It also makes for a perfectly creamy texture. 1/3 cup is all you need.
  • Light Brown Sugar: Just a little bit of light brown sugar, 1/2 tbsp, sweetens this breakfast up wonderfully. I love using brown sugar here because I think it adds to that cinnamon roll flavor we’re going for!
  • Chia Seeds: 1 tsp chia seeds thicken these oats up just right. They also provide fiber and omega-3 fatty acids.
  • Cinnamon: Cinnamon! The most important ingredient to anything cinnamon roll. Add 1 tsp cinnamon or however much you’d like.
  • Vanilla Extract: Add 1 tsp vanilla extract for that classic sweet flavor.

Substitutions & Additions

In my opinion one of the best things about overnight oat recipes are that they are usually super customizable! You can make a bunch of substitutions to meet your preferences or needs.

Or just to make do with the ingredients you have on hand!

Customizations

Oats: I use old fashioned oats in this recipe and I actually have not tested with quick oats, but I think they would work perfectly fine as a replacement.

Milk: Literally any milk under the sun can be used here! Perhaps oat milk, coconut milk, soy milk, or good old dairy milk.

Sweetener: I love adding brown sugar to these oats. I think it helps achieve those classic cinnamon bun flavors, but any sweetener should do. Like pure maple syrup, honey, or coconut sugar!

Protein: Looking to up the protein content? Add more greek yogurt. Or even a scoop of protein powder! Just make sure if you add protein powder to also add some extra liquid.

How To Make This Recipe

This no cook breakfast is so incredibly easy to make! All you do is combine the ingredients, place in the fridge, and enjoy the next day.

It is a fabulous option for those busy mornings when you are running out the door!

Step By Step Instructions

Step 1: Add the wet ingredients to a small bowl – almond milk, greek yogurt, and vanilla extract.  Combine until smooth.

Step 2: Next add the dry ingredients to the wet – old fashioned oats, light brown sugar, chia seeds, and cinnamon.  Combine thoroughly.

Step 3: Cover the bowl or transfer the oatmeal mixture to an airtight container.  Place in the refrigerator overnight or at least for a few hours.

Step 4: Remove the oats from the fridge the next morning and add any toppings you’d like.  I like an extra sprinkle of cinnamon and a drizzle of maple syrup or honey.

Step 5: Enjoy!

Expert Tips

Adjust the thickness to your liking. These are pretty thick oats, so if you prefer them a bit thinner try adding more almond milk. Perhaps 3/4 cup instead of 1/2 cup!

Use a whisk! This really helps when combining the liquid ingredients. Sometimes I find it quite tricky to get the yogurt and milk to mix together smoothly.

Go crazy with the cinnamon! I mean they are cinnamon roll oats.

Add your favorite toppings. Like peanut butter, extra cinnamon, or fresh berries.

Store in cute jars for the perfect grab & go breakfast!

I am not a dietician or nutritionist, but in my opinion – yes! Cinnamon roll oats are a great healthy breakfast option.

This recipe has complex carbohydrates, dietary fiber, omega-3 fatty acids, and vitamins. Plus it has bit of protein too from the greek yogurt!

It’s both nutritious and delicious.

Do I eat overnight oats cold?

Yes, I recommend eating overnight oats cold! They are typically enjoyed straight out of the fridge.

However, if you would prefer eating them warm just pot them in the microwave for a minute or two.

Can I meal prep this recipe?

Yes, absolutely! This is pretty much the perfect recipe to meal prep.

Just take 10 minutes at the start of the week to prepare a few jars and then you’ll have healthy and delicious morning meals ready to go for the rest of the week.
