Description

Cinnamon Roll Overnight Oats are an easy, healthy, and delicious breakfast recipe! Made with old fashioned oats, greek yogurt, almond milk, light brown sugar, and cinnamon … these thick and creamy oats take 5 minutes to make, are great for meal prep, and those cinnamon roll flavors really do shine through. The perfect satisfying and simple sweet treat breakfast!


Ingredients

  • 1/2 cup old fashioned oats
  • 1/3 cup plain greek yogurt
  • 1/2 cup unsweetened almond milk
  • 1/2 tbsp light brown sugar
  • 1 tsp chia seeds
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract

Instructions

  1. Add the wet ingredients to a small bowl – almond milk, greek yogurt, and vanilla extract.  Combine until smooth.
  2. Next add the dry ingredients to the wet – old fashioned oats, light brown sugar, chia seeds, and cinnamon.  Combine thoroughly.
  3. Cover the bowl or transfer the oatmeal mixture to an airtight container.  Place in the refrigerator overnight or at least for a few hours.
  4. Remove the oats from the fridge the next morning and add any toppings you’d like.  I like an extra sprinkle of cinnamon and a drizzle of maple syrup or honey.
  5. Enjoy!

Notes

Tips

  • Adjust the thickness to your liking. These are pretty thick oats, so if you prefer them a bit thinner try adding a bit more almond milk. Perhaps 3/4 cup instead of 1/2 cup!

  • Use a whisk! This really helps when combining the liquid ingredients. Sometimes I find it quite tricky to get the yogurt and milk to mix together smoothly.

  • Go crazy with the cinnamon! I mean they are cinnamon roll oats.

  • Add your favorite toppings. Like peanut butter, extra cinnamon, or fresh berries.

  • Store in cute jars for the perfect grab & go breakfast!
