Cinnamon Roll Overnight Oats are an easy, healthy, and delicious breakfast recipe! Made with old fashioned oats, greek yogurt, almond milk, light brown sugar, and cinnamon … these thick and creamy oats take 5 minutes to make, are great for meal prep, and those cinnamon roll flavors really do shine through. The perfect satisfying and simple sweet treat breakfast!
Ingredients
- 1/2 cup old fashioned oats
- 1/3 cup plain greek yogurt
- 1/2 cup unsweetened almond milk
- 1/2 tbsp light brown sugar
- 1 tsp chia seeds
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
Instructions
- Add the wet ingredients to a small bowl – almond milk, greek yogurt, and vanilla extract. Combine until smooth.
- Next add the dry ingredients to the wet – old fashioned oats, light brown sugar, chia seeds, and cinnamon. Combine thoroughly.
- Cover the bowl or transfer the oatmeal mixture to an airtight container. Place in the refrigerator overnight or at least for a few hours.
- Remove the oats from the fridge the next morning and add any toppings you’d like. I like an extra sprinkle of cinnamon and a drizzle of maple syrup or honey.

Tips

Adjust the thickness to your liking. These are pretty thick oats, so if you prefer them a bit thinner try adding a bit more almond milk. Perhaps 3/4 cup instead of 1/2 cup!

Use a whisk! This really helps when combining the liquid ingredients. Sometimes I find it quite tricky to get the yogurt and milk to mix together smoothly.

Go crazy with the cinnamon! I mean they are cinnamon roll oats.

Add your favorite toppings. Like peanut butter, extra cinnamon, or fresh berries.
