Single Serve Peanut Butter Cookie

You guys all loved my first individual cookie so much, the vegan single serve brookie, that I simply needed to make another flavor. And let me tell you this Single Serve Peanut Butter Cookie is just as delicious! Dare I say even more delicious?? It combines two of my all time favorite ingredients, peanut butter and chocolate, into the perfect gluten free dessert that can also easily be made vegan. I used white chocolate chips, so mine wasn’t entirely vegan, but if you use dairy free chocolate chips this recipe is completely vegan and just as delicious! This is also the absolutely perfect recipe if you are like me and love to bake, but are only doing so for yourself!

What you need for this Single Serve Peanut Butter Cookie!

This single serve cookie is so so easy to make! It is made with all healthy, wholesome ingredients and is entirely gluten free and can easily be made vegan. All the ingredients needed are also super simple and you likely already have most of them in your kitchen!

  • Oat Flour: This recipe uses oat flour! I have always loved oat flour, but recently I have been even more into it. It works perfectly in this recipe! I make my own flour by simply blending oats in a high speed blender until a fine flour forms, but you could also buy from the store.
  • Peanut Butter: I mean this peanut butter cookie of course has to have peanut butter in it! I always use natural peanut butter, with just peanuts and salt as the ingredients.
  • Pure Maple Syrup: Always one of my favorites! Pure maple syrup adds the best sweetness and flavor to this recipe.
  • Coconut Oil: Make sure to use refined coconut oil! Unrefined or virgin coconut oil tastes like coconuts and will make your cookie do so as well.
  • Applesauce: I love to add applesauce to my desserts for some extra moisture and sweetness! It also replaces extra oil or butter.
  • Chocolate Chips: I love love love white chocolate chips so that is what I used here! But if they are not your thing or you would like to make this cookie vegan, simply leave out or swap for dairy free chocolate chips.
  • Vanilla Extract & Salt for all things flavor and Baking Powder to make this cookie bake perfectly!

How to make this Single Serve Peanut Butter Cookie!

  1. Set the oven to 350 degrees.
  2. Combine the applesauce, peanut butter, pure maple syrup, melted coconut oil, and vanilla extract.
  3. Add in the oat flour, baking powder, and salt. Combine evenly.
  4. Stir in the chocolate chips.
  5. Transfer the batter to a small oven safe baking dish or bowl. Top with more chocolate chips, a swirl of peanut butter, and a sprinkle of salt.
  6. Bake for 13 minutes.
  7. Top with vanilla ice cream, a drizzle of peanut butter, and enjoy!

Ingredients

  • 1 tbsp peanut butter
  • 1 tbsp refined coconut oil, melted
  • 1 tbsp pure maple syrup
  • 1 tbsp applesauce
  • 5 tbsp oat flour
  • 1 tbsp chocolate chips
  • 1/4 tsp baking powder
  • 1/2 tsp vanilla extract
  • salt

Instructions

  1. Hi! I used this recipe as inspiration. Here are the changes I made: I used olive oil in place of coconut oil, I replaced 1 tbsp of oat flour with pb powder, and I cooked it in the microwave (cooked it for 45 secs, then kept adding 10 sec until it was cooked (my finger didn’t sink into the cookie when I pressed on it). I haven’t given a rating as I don’t like doing that unless I have followed the recipe exactly.
