If you guys follow my instagram, @wellnessbykay, you know that I have been all about single serve baked oatmeal recently. They are just so yummy and so cute, that I knew I needed to make another kind of single serve recipe, so I of course landed on dessert! I wanted to do a sort of mini cookie skillet, but a normal chocolate chip cookie wasn’t exciting enough for me. So I decided to throw some brownie in there too. And that my friends is how this Vegan Single Serve Brookie was born!

This brookie is made with simple ingredients and is not too heavy or sweet. It takes less than 30 minutes to make, is wonderfully chewy, and is perfect if you want/love to bake but it is only you who is eating the treat! Not to mention, this single serve brookie is absolutely delicious and completely vegan! What is better than that??

What you need for this Vegan Single Serve Brookie!

This recipe only requires 10 ingredients! Eleven if you count salt as an ingredient, but I do not haha. Those ten ingredients are all healthy and the recipe is entirely vegan and refined sugar free.

  • Coconut Oil: I used refined coconut oil in this recipe, but you could totally swap with the oil of your choice. If you are using coconut oil though, make sure it is refined. Unrefined or virgin tastes like coconuts!
  • Almond Butter: You guys already know I love nut butter in my desserts, especially cookies and brownies. So when it is a combination of both, you know its going to have some. You could swap the almond butter with cashew or peanut butter!
  • Applesauce: Applesauce adds some moisture and a subtle sweetness to this recipe!
  • Pure Maple Syrup: Pure maple syrup is one of my absolute favorite sweeteners to use. It is refined sugar free and gives such a delicious flavor! You could swap with a different liquid sweetener of your choice, like honey or agave.
  • Whole Wheat Pastry Flour: I love to use whole wheat pastry flour because it gives a little nutritional boost, but still makes soft & light treats. I haven’t tested with all purpose flour, but these two flours are generally pretty interchangeable, so I believe it would also work.
  • Cocoa Powder: Cocoa powder for the brownie part of this brookie!
  • Dairy Chocolate Chips: I almost always use semi sweet dairy free chocolate chips, but you can use whatever you have on hand and enjoy!
  • Vanilla Extract & Salt for flavor, Baking Powder for a little rise, and an optional splash of Almond Milk.

Also, ice cream is not technically an ingredient, but I think it is a must. This little single serve brookie was inspired by and reminds me of a cookie skillet. And I personally believe it is a sin to not eat one of those fresh out of the oven with a melty scoop of vanilla ice cream on top. So that is of course how I enjoyed this recipe! You do you, but I highly encourage you to enjoy it in the same way!!

How to make this Vegan Single Serve Brookie!

  1. Set the oven to 350 degrees.
  2. Combine the melted coconut oil, applesauce, almond butter, maple syrup, and vanilla extract.
  3. Add the whole wheat pastry flour, baking powder, and salt. Combine evenly.
  4. Remove 2 tbsp of the dough and add to a separate bowl.
  5. To that 2 tbsp, add the cocoa powder. Combine.
  6. Disperse the chocolate chips between the cookie dough and the brownie batter evenly. The brownie batter may be a little dry, so this is where you can add the splash of almond milk if you need!
  7. Grab a small baking dish or even an oven safe shallow bowl. Layer in the cookie dough and the brownie batter.
  8. Top with more chocolate chips and a sprinkle of salt!
  9. Bake for 13 minutes.
  10. Remove from the oven and enjoy.
  11. For ultimate deliciousness, top with a scoop of vanilla ice cream!!!
