Vegan Single Serve Brookie

Need a delicious dessert for one?  This Vegan Single Serve Brookie is your answer. A chewy chocolate chip cookie and a rich brownie all in one, this recipe is the best of both worlds!  It’s made with healthy ingredients, ready in under 30 minutes, and best enjoyed warm with a scoop of vanilla ice cream.


  • 1 tbsp coconut oil, melted
  • 1 tbsp applesauce
  • 1 tbsp almond butter
  • 1 tbsp pure maple syrup
  • 3 tbsp whole wheat pastry flour
  • 1 1/2 tsp cocoa powder
  • 1 tbsp dairy free chocolate chips
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking powder
  • pinch of salt
  • splash of almond milk (if needed)


  1. Set the oven to 350 degrees.
  2. Combine the melted coconut oil, applesauce, almond butter, maple syrup, and vanilla extract.
  3. Add the whole wheat pastry flour, baking powder, and salt. Combine evenly.
  4. Remove 2 tbsp of the dough and add to a separate bowl.
  5. To that 2 tbsp, add the cocoa powder. Combine.
  6. Disperse the chocolate chips between the cookie dough and the brownie batter evenly. The brownie batter may be a little dry, so this is where you can add the splash of almond milk if you need!
  7. Grab a small baking dish or even an oven safe shallow bowl. Layer in the cookie dough and the brownie batter.
  8. Top with more chocolate chips and a sprinkle of salt!
  9. Bake for 13 minutes.
  10. Remove from the oven and enjoy.
  11. For ultimate deliciousness, top with a scoop of vanilla ice cream!!!
