Vegan Peanut Butter Chocolate Chip Chickpea Blondies

This recipe has a special place in my heart! I think it was my first truly successful recipe that I ever made. I’ve made them more than any other recipe on my blog or instagram and made them again this week to get some photos that do them justice. It made me remember just how delicious they are! They are made with such simple and wholesome ingredients and combine my two favorite flavors, peanut butter and chocolate. I literally don’t think there is anyway these Vegan Peanut Butter Chocolate Chip Chickpea Blondies could be bad! I love to have treats like this on hand for when my sweet tooth kicks in and these definitely do the job. They will without a doubt be making more appearances in my weekly baking lineups.

What you need for these Vegan Peanut Butter Chocolate Chip Chickpea Blondies!

  • chickpeas
  • peanut butter
  • maple syrup
  • vanilla extract
  • almond milk
  • baking powder
  • almond flour
  • dairy free chocolate chips

I love this recipe for many many reasons. The first reason is that they quite literally taste like little bites of peanut butter chocolate heaven. Okay dramatic? Maybe, but you get the point. They are also made with such simple and minimal ingredients. The main ingredient is chickpeas, wich sounds kind of weird in a baked good, but they make for a perfect ooey gooey dessert. Not to mention a nice boost of protein! There is only a little bit of almond flour in these, making them gluten free and grain free! These blondies also don’t require eggs and with the use of dairy free chocolate chips are completely vegan.

How to make these Vegan Peanut Butter Chocolate Chip Blondies!

  1. Set the oven to 350 degrees.
  2. Combine chickpeas, maple syrup, peanut butter, vanilla extract, and almond milk in a food processor or high speed blender until smooth.
  3. Move the mixture to a mixing bowl and add in almond flour, baking powder, and chocolate chips. Combine.
  4. Pour the batter into a greased or parchment paper lined 8×8 baking tray.
  5. Top with extra chocolate chips. (Optional but highly recommended!)
  6. Bake for 20 minutes.
  7. Let cool, cut into squares, and enjoy!
  8. Store in the fridge.

Another reason why I love these Vegan Peanut Butter Chocolate Chip Blondies is because they are mainly made in a blender and are so freaking easy! I don’t know about you guys but when I bake, the kitchen is typically a disaster after. But when I make these, that is not the case! You basically just throw all the ingredients in a blender and have your batter. It’s that easy. It also makes for very little mess and minimal cleanup.

Vegan Peanut Butter Chocolate Chip Chickpea Blondies

These Vegan Peanut Butter Chocolate Chip Chickpea Blondies are a delicious treat made with wholesome ingredients!  They are gluten free, grain free, and refined sugar free.

Ingredients

Scale
  • 15.5 oz can chickpeas
  • 1/2 cup peanut butter
  • 1/3 cup + 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 12 tbsp almond milk (only if you need)
  • 1/2 tsp baking powder
  • 1/4 cup almond flour
  • 1/4 cup dairy free chocolate chips (+ a little extra)

Instructions

  1. Set the oven to 350 degrees.

  3. If your blender or food processor is having trouble blending everything, this is when you can add the 1 or 2 tablespoons of almond milk.
  4. Move the mixture to a mixing bowl and add in almond flour, baking powder, and chocolate chips. Combine.
  5. Pour the batter into a greased or parchment paper lined 8×8 baking tray.
  6. Top with extra chocolate chips. (Optional but highly recommended!)
  7. Bake for 20 minutes.

  2. Loved these!! But I remember having to bake them for a lot longer than the allotted time (probably because they are vegan)

      Hi Margaret ! Thanks for the love ! And yes I can definitely see having to bake for a little longer. The chickpeas make for a little bit of mushy texture !!
