Description
These Vegan Peanut Butter Chocolate Chip Chickpea Blondies are a delicious treat made with wholesome ingredients! They are gluten free, grain free, and refined sugar free.
Ingredients

- 15.5 oz can chickpeas
- 1/2 cup peanut butter
- 1/3 cup + 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1 – 2 tbsp almond milk (only if you need)
- 1/2 tsp baking powder
- 1/4 cup almond flour
- 1/4 cup dairy free chocolate chips (+ a little extra)
Instructions
- Set the oven to 350 degrees.
- Combine chickpeas, maple syrup, peanut butter, and vanilla extract in a food processor or high speed blender until smooth.
- If your blender or food processor is having trouble blending everything, this is when you can add the 1 or 2 tablespoons of almond milk.
- Move the mixture to a mixing bowl and add in almond flour, baking powder, and chocolate chips. Combine.
- Pour the batter into a greased or parchment paper lined 8×8 baking tray.
- Top with extra chocolate chips. (Optional but highly recommended!)
- Bake for 20 minutes.
- Let cool, cut into squares, and enjoy!
- Store in the fridge.
