These cookies are everything you need and more. They’re chewy, soft in the middle, crispy on the edges, and full of festive sweetness. They’re truly like a birthday cake, sugar cookie, and chocolate chip cookie all in one.

This fun cookie recipe is full of colorful sprinkles, chocolate chips, and sweet deliciousness! It’s the perfect treat for birthday parties, holidays, and any special occasion in between.

Ingredient Notes

  • Salted Butter: Salted butter is the base of these chewy cookies. It adds that rich and delicious flavor we all know and love. 1/2 cup is all you need!
  • Sugars: You will need both light brown sugar and white sugar in this recipe. Add 3/4 cup brown sugar and 1/2 cup white sugar. The two combined deliver the perfect sweetness!
  • Egg: Add 1 large egg here for moisture and binding.
  • All Purpose Flour: This recipe also calls for 1 1/4 cup of all purpose flour. It’s a great amount to make soft, chewy, and crispy cookies all in one.
  • Chocolate Chips: Chocolate chips! The best part of any cookie. Add 1/2 cup of semi-sweet chocolate chips here.
  • Sprinkles: The star of this show is of course rainbow sprinkles. Or rainbow jimmies if you will! 1/4 cup is just the right amount.
  • Vanilla Extract: Vanilla gives that classic taste to these cookies. Add 1 1/2 tsp!
  • Baking Powder: 1/4 tsp baking powder bakes these to perfection.
  • Salt: Lastly, add 1/4 tsp salt to balance out all the sweet.

Substitutions & Additions

There are a few simple ingredient swaps you can make to these funfetti chocolate chip cookies in order to meet your personal preferences and tastes. You can also make some tasty additions!

Chocolate Chips: My favorite addition or swap involves chocolate! You can swap the semi sweet chips for milk, dark, or white chocolate chips.

Flour: I have not tested the swap in this exact recipe, but all purpose flour can typically be replaced 1:1 with whole wheat pastry flour. It’s an easy way to up the nutrition on these heavy-on-the-sugar cookies!

Sprinkles: The sprinkles used in this cookie are the easiest way to switch the treat up! The typical rainbow option is perfect for a birthday party, but you could use chocolate sprinkles instead. You can also used different colors to celebrate different events – like game days, graduations, themed parties, Christmas, and more!

Candy: Candy would be such a fun idea to add here! Like M&Ms or any of your favorites.

How To Make This Recipe

These chewy chocolate chip cookies are such a simple recipe! No electric or stand mixer is needed and you only have to chill the dough for 30 minutes.

You’ll have a warm, ooey-gooey batch of colorful cookies before you even know it! And then you’ll want to make another one. I promise!

Step By Step Instructions

Step 1: First set the oven to 350 degrees.

Step 2: Next to a large mixing bowl add the melted butter, light brown sugar, and white sugar.  Combine evenly. Then add the egg and vanilla extract.  Combine.

Step 3: In a separate large bowl combine the all purpose flour, baking powder, and salt.  Add the flour mixture to the wet ingredients.  Combine until a cookie dough forms. Stir in the chocolate chips and rainbow sprinkles.

Step 4: Chill the dough in the refrigerator for 30 minutes.

Step 5: Next scoop about 1 1/2 tbsp of the cold cookie dough for each cookie dough ball. Roll into an even round ball.  Then place the cookie dough balls on a parchment paper lined baking sheet.  (You should be able to make 18 cookies). Bake for 15 minutes.

Step 6: Enjoy!

Expert Tips

I know it’s annoying, but you must chill the cookie dough! Otherwise the cookies will spread too much when baking.

Use a cookie scoop to get evenly sized cookies.

After you scoop the dough with the cookie scoop, roll each scoop into evenly rounded balls. This will make your final cookies perfectly round!

Bang the cookie sheet when you remove the cookies from the oven! I find this helps set the cookies fully, flatten them out, and develop crackly beautiful tops.

For these cookies, the sprinkles are actually mixed right into the dough. You can also press a little extra on top when the cookie dough balls have been rolled, right before baking!

Store these cookies in an airtight container at room temperature. They will stay most fresh and delicious for 3-5 days!

For longer storage, move to the refrigerator. There the cookies will keep for 1-2 weeks.

Can I freeze this recipe?

Yes, totally! Simply transfer the cookies to a freezer safe Ziploc bag or container and place in the freezer.

They will last for a couple of months and you can grab a delicious cookie whenever your sweet tooth hits!
