What is brown butter?

Brown butter is regular butter that has been cooked just long enough to toast the milk solids found in the butter. The result is a rich, nutty, and unbeatable flavor … way better than just your classic melted butter! It truly elevates any baked good, especially these chocolate chunk cookies.

Here’s how to do it:

  1. Add the butter to a pan on the stove over medium heat.
  2. Once the butter has melted, continue cooking & stirring constantly until it turns golden brown in color and smells nutty and very buttery. This should take about 5 minutes.
  3. Remove the butter from the hot pan once you reach this point so it does not burn.

Ingredients needed for Brown Butter Chocolate Chunk Cookies…

These chocolate chunk cookies call for all your classic cookie ingredients – butter, brown sugar, flour, etc. Very simple and only a few … 7 to be exact!

  • Butter: The star of these cookies is truly the brown butter! It brings this cookie to a whole new level. You’ll need 1/2 cup of salted butter.
  • Brown Sugar: Light brown sugar adds a rich & delicious sweetness to this recipe. 1 cup is the perfect amount!
  • Flour: Add 1 cup all purpose flour to these chewy cookies!
  • Chocolate Bar: You can use the chocolate bar of your choice here but I love semi sweet. It just adds the perfect flavor! Use a 4 oz bar or however much your heart desires.
  • Egg: 1 egg add the perfect moisture & binding here.
  • Vanilla Extract: Vanilla extract gives this recipe that classic chocolate chip cookie taste. Add 2 tsp!
  • Baking Powder: 1/4 tsp of baking powder bakes these cookies to perfection.

How to make Chewy Chocolate Chunk Cookies from scratch…

If you are looking for a quick and easy cookie recipe that still impresses, look no further. This recipe is absolutely your answer! All you need is one bowl, 15 minutes of chilling, and no mixer at all.

Here’s how to do it!

  1. Set the oven to 350 degrees.
  2. Start by browning the butter.  Add the butter to a pan on the stove over medium heat.  Once the butter has melted, continue cooking & stirring constantly until it turns golden brown in color and smells nutty and very buttery.  Remove the butter from the hot pan once you reach this point so it does not burn.
  3. Add the browned butter to a large mixing bowl along with the brown sugar.  Combine evenly.
  4. Next add in the egg, vanilla extract, and mix until smooth.
  5. Then add the dry ingredients – flour & baking powder.  Combine evenly again.
  6. Chop up the chocolate bar and stir into the cookie dough.
  7. Place the dough in the refrigerator to chill for 15 minutes.
  8. Remove from the fridge and roll large tablespoon sized scoops of the dough into balls.  Place the cookies on a greased or lined baking tray about 2 inches apart to make sure they have enough room to spread.  You should be able to make about 14 cookies.
  9. Bake for 12 minutes.
  10. As soon as you remove the cookies from the oven, bang the baking tray flat on the counter a few times and then let the cookies cool completely.  These steps are important for the cookies to form properly.
  11. Enjoy!

Brown Butter Cookie tips…

Follow the below tips for the perfect cookies every time!

  • Keep an eye on your brown butter … make sure it doesn’t burn!
  • Bake for exactly 12 minutes … I tried 10 minutes & the results were different!
  • Bang on the counter as soon as you remove from the oven
  • Let the cookies sit & cool before touching … since these cookies are a little under-baked this step is especially important!

Can I add to or make swaps to these cookies?

I honestly would not add anything to these cookies! I think simple is best in this case and any additions would actually take away from the flavor.

As for swaps, I think you can make some changes with the chocolate. You can swap the chunks for chips or use a dark chocolate instead of the semi-sweet. All would be absolutely delicious!

How to best store Chocolate Chunk Cookies…

You can store these cookies in an airtight container on the counter at room temperature for 3-5 days. After that, I recommend you store in the refrigerator. These cookies will stay fresh for 1-2 weeks there … although I highly doubt they will last that long in your house!

For even longer storage, keep these in your freezer where they will stay for a couple of months! And trust me, you will thank yourself later when you dig into your stash and grab one of these babies out. So good!
