Peanut Butter Chocolate Chip Oatmeal Cookies
I don’t know if you guys have noticed at all, buuuut i tend to post a lot of recipes with peanut butter, a lot of recipes with chocolate, AND a lot of recipes with both peanut butter and chocolate. What can I say? My love for the peanut butter chocolate combination runs deep. I’m sure it comes as no surprise that my favorite candy growing up were Reece’s cups! I mean, so freaking delicious. And most of the time when I’m thinking about what new dessert I want to create my brain just takes me to peanut butter and chocolate! I really just cannot help it. So naturally I made these Peanut Butter Chocolate Chip Oatmeal Cookies. They are so so quick & easy and are basically little bites of peanut butter heaven. You sold yet?
What you need to make these Peanut Butter Chocolate Chip Oatmeal Cookies!
- peanut butter
- coconut sugar
- eggs
- oats
- vanilla extract
- cinnamon
- applesauce
- baking powder
- chocolate chips
Another reason why I love these cookies, besides the fact that they are made with peanut butter and chocolate which we have already established is my favorite flavor combination of all time, they are made with such simple and accessible ingredients. First up, the base of these cookies is peanut butter! I always use a peanut butter with just one or two ingredients, peanuts and maybe salt, and i think a runny peanut butter works best! These cookies get their sweetness and flavor simply from coconut sugar, applesauce, cinnamon, and vanilla extract. Super simple and even refined-sugar free! Also there is no flour in this recipe, just oats. So depending on how you view oats, these cookies are gluten-free as well. To make sure they are gluten free you can use certified gluten free oats! These cookies can also be completely dairy free if you use dairy free chocolate chips.
How to make these Peanut Butter Chocolate Chip Oatmeal Cookies!
- Set the oven to 350 degrees.
- Combine the peanut butter, coconut sugar, egg, vanilla extract, and applesauce.
- Next add in the oats, cinnamon, baking powder until evenly combined.
- Stir in the chocolate chips.
- Spoon the batter onto a greased or parchment paper lined baking tray. The batter will be sticky and a little hard to shape but do your best to make them into cookie shapes.
- Bake for 10 minutes.
- Let cool and enjoy!
These cookies are so incredibly easy to make! They literally take 30 minutes from start to finish. So if you’re looking for a dessert that requires minimum effort, but still tastes amazing you are in the right spot! These oatmeal cookies also have the perfect chewy texture. I’m usually a chewy cookie gal over crunchy and crispy so they’re perfect! And the best part is, when you bake these for 10 minutes they are a little under-baked and it is just chewy, melty, chocolatey perfection. Okay I gotta stop, i’m drooling.
