I present to you guys one of the easiest, most delicious desserts you can make, Healthier Peanut Butter Chocolate Cracker Bark! I think we have all probably had this dessert in some form or another, but I love this specific recipe and version because it is made with much better ingredients. It does not feel like as indulgent of a treat but is still absolutely scrumptious. Not to mention it is such an simple recipe that requires minimal ingredients, so it is literally perfect for all of your last minute holiday dessert needs. It will without a doubt impress all your family and friends, i know it impressed mine!

What you need for this Healthier Cracker Bark!

  • peanut butter
  • coconut sugar
  • coconut oil
  • almond milk
  • vanilla extract
  • dark chocolate chips
  • peanuts
  • saltine crackers

The base of this bark is saltine crackers! I used these crackers in this recipe, which have a better ingredient list than your typical saltine crackers and are also organic. But you can totally use regular saltine crackers if you would like! Next up for the sugar mixture i simply combined peanut butter, coconut sugar, coconut oil, almond milk, and vanilla extract as opposed to the regular butter and refined sugar that is typically used in these kinds of desserts. The sugar mixture has a delicious peanut buttery, caramelly flavor that is truly out of this world, you won’t even miss the butter! Lastly, the chocolate layer is simply melted dark chocolate chips. Then to finish off the bark, it is topped with peanuts for a little crunch and swirls of peanut butter to up the presentation.

How to make this Healthier Peanut Butter Chocolate Cracker Bark!

  1. Set the oven to 350 degrees.
  2. Line a baking tray with parchment paper.
  3. Spread out the saltine crackers evenly on the parchment paper.
  4. Combine the peanut butter, almond milk, coconut sugar, coconut oil, and vanilla extract on the stove. Simmer the mixture until it boils a little bit. The mixture should be ready when it turns a darker brown color and thickens up.
  5. Once done, pour the mixture over the saltine crackers and spread it evenly.
  6. Place in the oven and bake for 3 minutes.
  7. Remove from the oven and top the crackers and sugar mixture with the dark chocolate chips.
  8. Put back in the oven for approximately 30 seconds, just to help the chips melt.
  9. Remove from the oven and spread the chocolate evenly.
  10. While the chocolate is still warm top with the peanuts and swirl in some extra peanut butter if your would like. The extra peanut butter is not required, but I think it adds so much to the look of the bark!
  11. Let cool and harden in the fridge for a few hours.
  12. Once hardened cut the bark into squares.
  13. Store in the fridge and enjoy!

Ingredients
