Healthier Peanut Butter Chocolate Bark is my version of the classic Christmas crack! Made with creamy peanut butter, rich dark chocolate, and crunchy saltines … this easy treat has all you need for a delicious dessert. Plus it’s refined sugar free & vegan too!

- saltine crackers
- 1/2 tsp vanilla extract
- 1/4 cup almond milk
- 1/4 cup peanut butter
- 1/2 cup coconut sugar
- 3 tbsp coconut oil
- 1 cup dark chocolate chips
- 1/4 cup peanuts
Instructions
- Set the oven to 350 degrees.
- Line a baking tray with parchment paper.
- Spread out the saltine crackers evenly on the parchment paper.
- Combine the peanut butter, almond milk, coconut sugar, coconut oil, and vanilla extract on the stove. Simmer the mixture until it boils a little bit. The mixture should be ready when it turns a darker brown color and thickens up.
- Once done, pour the mixture over the saltine crackers and spread it evenly.
- Place in the oven and bake for 3 minutes.
- Remove from the oven and top the crackers and sugar mixture with the dark chocolate chips.
- Put back in the oven for approximately 30 seconds, just to help the chips melt.
- Remove from the oven and spread the chocolate evenly.
- While the chocolate is still warm top with the peanuts and swirl in some extra peanut butter if your would like. The extra peanut butter is not required, but I think it adds so much to the look of the bark!
- Let cool and harden in the fridge for a few hours.
- Once hardened cut the bark into squares.
- Store in the fridge and enjoy!
