Peanut Butter Chocolate Chip Oatmeal Cookies

These Peanut Butter Chocolate Chip Oatmeal Cookies are made with simple & healthy ingredients, are deliciously chewy, and would make the perfect dessert or even addition to breakfast.  They are also refined-sugar free and can be gluten & dairy free!


  • 1/2 cup peanut butter (runny)
  • 1/3 cup coconut sugar
  • 1 egg
  • 3/4 cup oats (certified gluten free)
  • 1/4 tsp vanilla extract
  • sprinkle of cinnamon
  • 1 tbsp applesauce
  • 1/2 tsp baking powder
  • 1/4 cup chocolate chips


  1. Set the oven to 350 degrees.
  2. Combine the peanut butter, coconut sugar, egg, vanilla extract, and applesauce.
  3. Next add in the oats, cinnamon, baking powder until evenly combined.
  4. Stir in the chocolate chips.
  5. Spoon the batter onto a greased or parchment paper lined baking tray. The batter will be sticky and a little hard to shape but do your best to make them into cookie shapes.
  6. Bake for 10 minutes.
  7. Let cool and enjoy!
