Do you ever want cookies, but not an entire batch? Maybe you live alone or you simple don’t want tons of cookies lying around for the rest of the week.

But either way, you definitely don’t need 24 cookies!

That’s where Small Batch No-Bake Peanut Butter Chocolate Cookies come in. Not only are they the perfect sized sweet treat, they are also incredibly easy to make.

All you need is one pot and 10 minutes to whip these up. Then you’ll have soft, chewy, and ooey-gooey cookies full of chocolate peanut butter goodness on your table!

They’re gluten free, dairy free, and vegan too. The perfect healthy dessert to have on hand for the week!

This no bake cookie recipe only calls for 6 simple and healthy ingredients!

The result is a delicious treat that is also gluten free, refined sugar free, dairy free, and vegan.

Ingredient Notes

  • Peanut Butter: The base of these salty sweet delicious treat is creamy, natural peanut butter. You’ll need 1/4 cup + 1 tbsp.
  • Cocoa Powder: 1 tbsp unsweetened cocoa powder gives these no bake oatmeal cookies the perfect chocolate flavor.
  • Maple Syrup: This healthy cookies recipe calls for only 3 tbsp pure maple syrup. It’s just the right level of sweetness!
  • Almond Milk: Add 2 tbsp unsweetened almond milk to add a little bit of extra moisture here.
  • Vanilla Extract: 1 tsp vanilla extract adds that classic taste we all know and love.
  • Oats: Old-fashioned rolled oats gives these cookies their amazing chewy texture. Plus they make this recipe gluten free! You’ll need 1 cup.

Substitutions & Additions

There are not many ingredients to begin with in this small batch no bake cookies recipe, so you can’t change too much. But there are a few substitutions and additions you could make to meet your personal preferences, tastes, or needs!

Oats: This recipe calls for old fashioned oats, but I think quick oats would do the trick too.

Peanut Butter: Peanut butter could be replaced with a different nut butter of your choice, like almond butter or cashew butter. You could even do a seed butter if you have an allergy!

Maple Syrup: Honey would make a fabulous replacement for maple syrup here. Or any other liquid sweetener you enjoy.

Almond Milk: Any type of milk could be swapped in for almond milk.

Mix-Ins: I think these yummy cookies would be even more delicious with some mix-ins. Perhaps chocolate chips or peanuts!

How To Make This Recipe

These chocolate peanut butter no bake cookies are super easy to make! All you need is one pot and about 5 minutes to whip them up.

Then you can store in the refrigerator for the week for whenever your sweet tooth hits.

Step By Step Instructions

Step 1: Add the creamy peanut butter, pure maple syrup, almond milk, cocoa powder, and vanilla extract to a small saucepan on the stove over low heat.

Step 2: Combine the ingredients and melt completely.

Step 3: Next add in the old-fashioned oats to the chocolate mixture.  Stir to combine.

Step 4: Quickly scoop the cookie dough onto a parchment paper or wax paper lined small baking sheet or large plate.  The cookies should be about 2 tbsp in size and you should be able to make 6 cookies.  

Step 5: Shape the cookie dough scoops into cookies.  I like to place a piece of parchment paper on top of the cookies and press down gently.

Step 6: Next place the cookies in the refrigerator to set for about 30 minutes or until hardened to the touch.

Step 7: Enjoy! Store in the refrigerator.

Add a pinch of flakey salt on top of these tasty cookies. Makes for the perfect salty sweet treat!
