- 1/4 cup + 1 tbsp creamy peanut butter
- 3 tbsp pure maple syrup
- 2 tbsp unsweetened almond milk
- 1 tbsp cocoa powder
- 1 tsp vanilla extract
- 1 cup old fashioned oats
- Salt
Instructions
- Add the creamy peanut butter, pure maple syrup, almond milk, cocoa powder, and vanilla extract to a small saucepan on the stove over low heat.
- Combine the ingredients and melt completely.
- Next add in the old-fashioned oats and a pinch of salt. Stir to combine until a cookie dough forms.
- Quickly scoop the cookie dough onto a parchment paper lined small baking sheet or large plate. The cookies should be about 2 tbsp in size and you should be able to make 6 cookies.
- Shape the cookie dough scoops into cookies. I like to place a piece of parchment paper on top of the cookies and press down gently.
- Next place the cookies in the refrigerator to set for about 30 minutes or until hardened to the touch.
- Enjoy! Store in the refrigerator.
