Small Batch No Bake Cookies are the best easy, healthy, and delicious dessert recipe! Made with old fashioned oats, creamy peanut butter, cocoa powder, and pure maple syrup … this batch of 6 healthy cookies is soft, chewy, and rich. They’re gluten free, dairy free, vegan, and only take about 10 minutes to make!


Ingredients

  • 1/4 cup + 1 tbsp creamy peanut butter
  • 3 tbsp pure maple syrup
  • 2 tbsp unsweetened almond milk
  • 1 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1 cup old fashioned oats
  • Salt

Instructions

  1. Add the creamy peanut butter, pure maple syrup, almond milk, cocoa powder, and vanilla extract to a small saucepan on the stove over low heat.
  2. Combine the ingredients and melt completely.  
  3. Next add in the old-fashioned oats and a pinch of salt.  Stir to combine until a cookie dough forms.
  4. Quickly scoop the cookie dough onto a parchment paper lined small baking sheet or large plate.  The cookies should be about 2 tbsp in size and you should be able to make 6 cookies.  
  5. Shape the cookie dough scoops into cookies.  I like to place a piece of parchment paper on top of the cookies and press down gently.
  6. Next place the cookies in the refrigerator to set for about 30 minutes or until hardened to the touch.
  7. Enjoy! Store in the refrigerator.
