No-Bake Chocolate Chip Cookie Dough Bites are an easy and delicious vegan dessert recipe! Trust me, your family members will not be able to keep their hands off this sweet treat!

A vegan, no-bake dessert recipe for cookie dough lovers…

Some of my earliest memories in the kitchen include baking with my mom. We didn’t make anything fancy, just good old boxed brownies or vanilla cupcakes … but no matter what it was, I can almost guarantee to you that I was licking the spoon. And if there was a cookie dough tub in the fridge I was definitely sneaking bites when mom wasn’t looking!

With these chocolate chip cookie dough bites I finally don’t have to be secretive! It is raw cookie dough that is meant to be enjoyed as is. My childhood dream come true! Plus the best part is that this cookie dough requires only 7 ingredients, is incredibly easy to make, and is a healthy dessert option. It is the solution to all your cookie dough cravings!

Ingredients needed…

Chocolate chip cookie dough bites are made with all wholesome, simple ingredients! They are gluten free, vegan, and refined sugar free … making them one of my most allergy-friendly recipes. Almost anyone can enjoy these bite-sized sweet treats!

  • Cashew Butter: Cashew butter is the base of this edible cookie dough recipe. It provides a neutral taste and creamy texture. You’ll need 1/2 cup!
  • Pure Maple Syrup: The sweetener in this recipe is pure maple syrup. It is a refined sugar free option with a rich & delicious flavor. 1/4 cup is perfect.
  • Vanilla Extract: Vanilla extract helps to add that classic chocolate chip cookie flavor here. Add 2 tsp!
  • Chocolate Chips: You will need chocolate chips in both the cookie dough itself, 1/4 cup, and the outside coating, 2/3 cup. Semi-sweet mini chocolate chips are my favorite here! If you need a dairy free option, this is my go-to.
  • Coconut Oil: A little bit of refined coconut oil is melted with chocolate for the coating. All you need is 2 tsp!
  • Almond Flour: The use of almond flour in this recipe makes it completely gluten free! It also helps to avoid the issue of raw flour that comes with regular flour. Add 1 cup.
  • Salt: Lastly, add 1/2 tsp of salt to the cookie dough to balance out all the sweet.

Edible Cookie Dough Bites ingredient swaps…

Here are a few easy ingredient swaps you can make to this no bake recipe! Just make sure to not change too many, as I can’t guarantee the end result will be the same.

Cashew Butter: Cashew butter can be replaced another nut butter of your choice. Peanut butter or almond butter would both work!

Chocolate: I used semi-sweet chocolate in this recipe, but it could easily be replaced with dark chocolate. Or even white chocolate chips!

Maple Syrup: I do think maple syrup is the best liquid sweetener to use here … but others like honey or agave should work too.

How to make No-Bake Cookie Dough Balls…

This no-bake dessert is incredibly easy to make! You simply mix the ingredients, roll into balls, dip in chocolate, and store in the fridge.

Detailed Steps:

Step 1: In a large bowl combine the cashew butter, pure maple syrup, vanilla extract until smooth.

Step 2: Next add in the dry ingredients – almond flour and salt.  Combine evenly and stir in the chocolate chips.

Step 3: Roll the cookie dough into small, about 2 tsp sized, balls.  You should be able to make 20-25 balls.  Transfer to a parchment paper lined baking sheet or large plate and place in the fridge to chill for about 30 minutes – 1 hour.

Step 4: Then work on the chocolate coating.  Add the chocolate chips and coconut oil to a double boiler on the stove over low heat.  Or add them to a small microwave safe bowl and microwave in 30-second intervals into melted completely.

Step 5: Remove the cookie dough balls from the fridge and coat in the melted chocolate. Top with flakey salt & enjoy!
