Instructions

  1. In a large mixing bowl combine the cashew butter, pure maple syrup, vanilla extract until smooth.
  2. Next add in the dry ingredients – almond flour and salt.  Combine evenly.
  3. Stir in the chocolate chips.
  4. Roll the cookie dough into small, about 2 tsp sized, balls.  You should be able to make 20-25 balls.  Transfer to a parchment paper lined baking sheet or large plate and place in the fridge to chill for about 30 minutes – 1 hour.
  5. Then work on the chocolate coating.  Add the chocolate chips and coconut oil to a double boiler on the stove over low heat.  Or add to a small bowl and microwave in 30-second intervals into melted completely.
  6. Remove the cookie dough balls from the fridge and coat in the melted chocolate.
  7. Top with flakey salt & enjoy!
