Cookie Dough
- 1/2 cup cashew butter
- 1/4 cup pure maple syrup
- 2 tsp vanilla extract
- 1 cup almond flour
- 1/2 tsp salt
- 1/4 cup semi-sweet chocolate chips (dairy free if needed)
Chocolate Coating
- 2/3 cup semi-sweet chocolate chips (dairy free if needed)
- 2 tsp refined coconut oil
Instructions
- In a large mixing bowl combine the cashew butter, pure maple syrup, vanilla extract until smooth.
- Next add in the dry ingredients – almond flour and salt. Combine evenly.
- Stir in the chocolate chips.
- Roll the cookie dough into small, about 2 tsp sized, balls. You should be able to make 20-25 balls. Transfer to a parchment paper lined baking sheet or large plate and place in the fridge to chill for about 30 minutes – 1 hour.
- Then work on the chocolate coating. Add the chocolate chips and coconut oil to a double boiler on the stove over low heat. Or add to a small bowl and microwave in 30-second intervals into melted completely.
- Remove the cookie dough balls from the fridge and coat in the melted chocolate.
- Top with flakey salt & enjoy!
