Birthday Cake Cereal Bars
As we all know it is summer. Which means that it is just WAY to hot to turn on the oven sometimes. But of course you still gotta have some sweets, so that is where no bake desserts come in handy my friends! And let me tell you, these Birthday Cake Cereal Bars are the best no bake dessert I have had in a while. They are perfectly crunchy, covered with delicious white chocolate, and even have some fun sprinkles on top!! They are amazing on their own, but I have also been loving chopping one up and using as an ice cream topper. SO good!
What you need for these Birthday Cake Cereal Bars!
These cereal bars are seriously simple! The ingredients are very basic and also pretty healthy for you. I mean of course the bars are doused in chocolate, but I am a firm believer that all good things in life are doused with chocolate. Anyone else with me? Anyway, once you mix the ingredients together and put the bars in the freezer to set, you’re pretty much good to go!
- Cashew Butter: You guys! I am having a major moment with cashew butter. Like major!!! I love putting it in my oatmeal bowls, on toast, and most importantly I love baking (or no-baking in this case) with it. Cashew butter provides the perfect neutral flavor and creamy texture for these bars.
- Coconut Oil: Make sure to use refined coconut oil! Unrefined coconut oil tastes like coconuts and will leave your cereal bars tasting like coconuts too.
- Maple Syrup: I’ve said it before, but I’ll say it again pure maple syrup is one of my favorite refined sugar free options! You could most likely swap this with a different liquid sweetener such as honey.
- Puffed Brown Rice Cereal: To make cereal bars you of course have to have cereal! I used puffed brown rice cereal. It gives these bars such a perfect crunch and texture.
- White Chocolate Chips: I am also having a major moment with white chocolate! I think it is highly underrated. You could probably switch the white chocolate with the chocolate of your choice, but I think white chocolate works best with the birthday cake flavors!
- Almond Extract: Okay I have a lot to say about the use of almond extract here. I have seen all over the place that almond extract gives sweet treats that cake batter flavor. However I don’t totally taste it. I still think it adds a super delicious flavor, I’m just not exactly sure if it’s cake batter! However, everyones says it does so maybe I’m wrong!!! Also, if you’re not super into that almond flavor I would just leave it out all together because it is definitely very strong.
- Lastly of course we’ve got a splash of Vanilla Extract and a pinch of Salt for some more flavor!
How to make these Birthday Cake Cereal Bars!
- Combine the cashew butter, coconut oil, maple syrup, vanilla extract, almond extract, and salt on the stove over low heat until smooth.
- Add the brown rice cereal to a mixing bowl.
- Pour the cashew butter mixture over the cereal and combine evenly.
- Line an 8×8 baking dish with parchment paper.
- Pour the cereal mixture into the dish. Spread and flatten the mixture.
- Place in the freezer.
- Combine the white chocolate chips with the coconut oil and melt according to the package instructions.
- Remove the bars from the freezer, pour the white chocolate on top, and spread evenly.
- Add sprinkles on top of the white chocolate.
- Place in the freezer for an hour to set.
- Remove the cereal bars from the freezer, cut into squares, and enjoy!
- Store in the freezer.

Description
These Birthday Cake Cereal Bars are a delicious and fun no-bake treat! They are perfectly crunchy, covered in creamy white chocolate, and super easy to make. All you need is a few simple ingredients and a freezer!
Ingredients
- 1/2 cup cashew butter
- 1/4 cup coconut oil (refined)
- 1 1/2 tsp vanilla extract
- 1/8 tsp almond extract (optional, see notes)
- 2 tbsp maple syrup
- 2 1/4 cup puffed brown rice cereal
- 1 cup white chocolate chips
- 1 tsp coconut oil (to melt with the chocolate)
- 1/4 tsp salt

Notes
- Almond extract! Everyone says that it gives treats that cake batter flavor. I’m not entirely sure I taste it, but I totally could be wrong. Either way I think it gives a delicious taste, but even the tiny amount used here is strong. So if you’re not super into that almond flavor I would just leave it out.
