Extra Fudgy, Chewy, & Gooey Brownies
I am a chewy brownie over cakey brownies girl any day. Through and through! Like honestly if I get a cakey brownie I will be seriously disappointed.
Because in my opinion a true brownie is all the things a cakey brownie is not – chewy, fudgy, and gooey.
Chocolate Tahini Brownies are most definitely not a brownie disappointment. In fact, I think they are the best brownies I have ever made. And I have made quite a few – zucchini brownies, cosmic brownies, s’mores brownies, and brownie bites too.
These brownies are decadent, rich, full of chocolate flavor, and complete with the most beautiful shiny, crackly tops. Ugh, perfection!
And I know tahini is quite the surprising ingredient here, but it truly works wonders. It adds a nutty flavor, incredible texture, and is a brownie game changer. I promise everyone will love this chocolate treat!

This recipe is made with all whole foods and simple ingredients! They come together to make a sweet treat full of rich chocolate flavor.
Plus the brownies are gluten free, grain free, and easily made dairy free!
Ingredient Notes
- Tahini: Tahini is of course the key ingredient here! Nutty tahini adds a rich, delicious, and unique flavor. This recipe calls for 1/2 cup tahini.
- Dark Chocolate: A dark chocolate bar is what adds the incredible chocolate flavor throughout these brownies. I recommend a 70-75% cacao bar for the best results. A 3.2 oz bar (or close to it) is all you need!
- Light Brown Sugar: The sweetener of choice in this recipe is light brown sugar! You’ll need 1 cup.
- Eggs: Add 2 large eggs to the brownie batter for moisture and binding.
- Vanilla Extract: 1 1/2 tsp vanilla extract adds that classic taste!
- Cocoa Powder: These brownies call for 1/3 cup unsweetened cocoa powder. Use high quality for the most delicious dessert!
- Almond Flour: Almond flour as the flour here makes this recipe completely gluten free and grain free. You only need a little for the perfect fudgy texture. 1/4 cup to be exact!
- Salt: Add a pinch, 1/4 tsp, of salt to balance out all the sweet.
- Chocolate Chips: Lastly, stir in 1/4 cup of semi sweet chocolate chips. Because more is always better when it comes to chocolate!
Substitutions & Additions
I don’t recommend making too many substitutions or additions to these brownies because they are just so dang good as is! But here are a few ideas for you to make this recipe meet your personal needs, preferences, or tastes.
Ideas
Tahini: Tahini is truly the most important ingredient here and makes these brownies what they are! But if you really don’t want to use the seed butter and still try this recipe – you could replace it with a very runny peanut butter or almond butter.
Sugar: The brown sugar here could be easily swapped with coconut sugar. This is a refined sugar free option!
Chocolate Chips: I used semi sweet chocolate chips here, but you could instead use dark chocolate, milk chocolate, or even white chocolate chips. Or try these dairy free chips for completely dairy free brownies!
Mix-Ins: I love these brownies as is, but chopped nuts or a swirl of tahini on top would be great additions.
How To Make This Recipe
This tahini brownie recipe is incredibly easy to make! It comes together in no time at all and you’ll have decadent fudgy brownies before you know it.
Step By Step Instructions
Step 1: Set the oven to 350 degrees.
Step 2: Chop the dark chocolate bar into chunks. Add the chocolate chunks and tahini to a small sauce pan on the stove over low heat. Melt and combine. (You could also melt in the microwave in 15 second intervals, stirring between each one)
Step 3: Add the eggs to a separate large bowl. Beat with an electric mixer for 2-3 minutes until foamy and bubbly.
Step 4: Transfer the tahini and melted chocolate mixture to a large mixing bowl. Add in the remaining wet ingredients – light brown sugar, whisked eggs, and vanilla extract. Combine evenly.
Step 5: Next add in the dry ingredients – cocoa powder, almond flour, and salt. Combine.
Step 6: Stir in the chocolate chips.
Step 7: Transfer the brownie batter to a parchment paper prepared pan, 8×8 baking dish. Spread evenly. Top with extra chocolate chips.
Step 8: Bake for 25 minutes.
Step 9: Remove from the oven, let cool, and cut into 16 squares. Enjoy!
Expert Tips
Make sure to beat the eggs until super foamy and bubbly! This is what gives these brownies their beautiful crackly top.
Use high quality ingredients for the best flavor. Specifically the tahini and dark chocolate.
The brownie batter will be super thick, but do not worry! It is supposed to be this way.
Bang the pan once you remove the brownies from the oven. I think this helps them set and develop the crinkly top.
Allow the brownies to cool completely before cutting. It will be way easier and you’ll get cleaner cut individual brownies!

There are many reasons why these brownies are so incredibly fudgy!
First, they have a high fat-to-flour ratio. There is only 1/4 cup of almond flour in this recipe. Which in itself is also high fat!
Second, these brownies do not use a leavening agent like baking powder. The use of one would rise the brownies creating a lighter cakey texture, rather than thick and fudgy.
Tahini is ground sesame seeds or sesame seed paste. It is essentially what peanut butter is to peanuts, but for sesame seeds!
The sesame seeds are typically roasted or toasted and then ground into a very thin, creamy, and pourable consistency. It is a staple ingredient in Middle Eastern and Mediterranean cooking!
Tahini is used in dips, dressings, desserts, and so many more dishes. Like my sun dried tomato hummus and chocolate chunk cake bars.
I recommend using a high quality tahini! One that is creamy, runny, and super pourable.

It is typically found either in the peanut butter and jelly aisle or international food aisle. I recommend checking out the international aisle to get the best kind.
It will most likely be a more authentic and traditional tahini!

Store this recipe in an airtight container at room temperature for 3-5 days. For any longer storage, move to the refrigerator. The brownies will keep there for 1 – 1 1/2 weeks.
You could also freeze this recipe! Simple transfer brownies to a freezer safe bag or container and place in the freezer. They’ll keep there for a couple of months.
