Ingredients needed for this Skillet Brownie Recipe…

You’ll need all your basic brownie ingredients for this skillet recipe. It’s rich, delicious, and of course calls for lots of chocolate! Its also flourless, which makes for such an ooey-gooey, fudgy brownie.

  • Butter: You will need 1/2 cup of salted butter to make this brownie skillet. Plus 1 tbsp for the caramel sauce. It adds that classic flavor we all know & love!
  • Chocolate Chips: The use of melted chocolate chips in this recipe gives it such a rich, chocolatey flavor, and a fudgy texture. You’ll need 1 cup of semi sweet chips.
  • Sugars: This recipe calls for both white sugar and light brown sugar. You’ll need 2/3 cup of white for the brownie and 2/3 cup of light brown for the caramel drizzle!
  • Eggs: 2 eggs are needed here for binding & moisture. They also give this skillet brownie that beautiful crinkly top!
  • Cocoa Powder: Cocoa powder is needed for all things chocolate! Add 1/4 cup.
  • Half & Half: The caramel drizzle in this recipe is made with half & half. It adds a delicious creamy texture! Use 1/4 cup.
  • Vanilla Extract: Add 1 tsp of vanilla extract for that classic taste.
  • Baking Powder: Baking powder is used to bake this brownie to absolute perfection. You’ll need 1/2 tsp!
  • Salt: Add a pinch of salt to this brownie batter to balance out all the sweet. 1/4 tsp to be exact.

Kitchen tools needed to make this Caramel Brownie Skillet…

The key tool needed for this recipe is of course a cast iron skillet. I use an 8 inch skillet … here’s a great option! But you could also use an 8 inch cake pan or even an 8×8 baking dish.

Other tools you’ll need:

  • Electric mixer (not absolutely necessary, but helpful)
  • Large mixing bowl
  • Rubber spatula
  • Measuring cups & spoons

How to make a Cast Iron Skillet Brownie from scratch…

This showstopper of a skillet is actually quite simple to make! It calls for pretty much your basic brownie baking method.

Here’s how to do it:

  1. Set the oven to 350 degrees.
  2. Start by melting the butter and chocolate chips together until smooth.  Add to a large mixing bowl.
  3. Next add in the white sugar and vanilla extract.  Combine evenly.
  4. Then in a separate bowl beat the eggs with an electric mixer for 1-2 minutes until foamy & a bit bubbly.  This helps create the crinkly top on the brownies.  Add the eggs to the brownie batter and stir until just combined.
  5. Next add in the dry ingredients – cocoa powder, baking powder, and salt.  Combine evenly.
  6. Transfer the batter to a greased 8 in cast iron skillet.  Bake for 30 minutes.
  7. Once you remove the skillet brownie from the oven, top with vanilla ice cream & the caramel drizzle. 
  8. Enjoy!

Let’s make a caramel drizzle…

You know what’s better than a fudgy brownie skillet? A fudgy brownie skillet topped with a sweet & salty homemade caramel sauce drizzle!

Here’s how to make it:

  1. Add the brown sugar, half & half, butter, and a pinch of salt to a pot on the stove over medium heat. 
  2. Bring the mixture to a slight boil then reduce the heat & let simmer for a few minutes until it thickens.
  3. Once thickened remove from the heat.
  4. That’s it!

Tip! This caramel sauce can harden relatively quickly, but all you have to do is pop in the microwave to get that smooth, dreamy texture again. Then drizzle away!

Why do I need to beat the eggs for this recipe?

Beating your eggs is the secret to getting that classic crinkle top brownie!!

Now I am not going to pretend to understand, or even know, the science behind why this happens … but I know it does! Simply beat your eggs with an electric mixer until foamy & slightly bubbly and then stir into your brownie batter. This tiny extra step results in that delicious crunch, crispy edge, and beautiful look! Ugh, its so good. And such a fun element to add to this caramel brownie skillet.

Note! You don’t need to use an electric mixer, but it is the easiest method and the one that makes the best crinkly top. If you don’t have an electric mixer, you can whisk the eggs by hand.

How to serve this delicious dessert…

Serve this delicious dessert straight out of the skillet! It’s a total crowd pleaser.

I recommend toppings with a couple scoops of vanilla ice cream, because there really is nothing better than an a brownie a la mode, and of course a drizzle of the homemade caramel sauce. Its so dang good, I will not judge you if you eat the entire skillet by yourself!

How to store this Caramel Brownie Recipe…

I highly recommend serving this brownie skillet right away. It is definitely most delicious when served straight out of the oven, but if you do have leftovers simply cover the skillet with plastic wrap and place in the fridge. It will last for about 5 days!

When you are ready for more brownie goodness, scoop some out, and pop in the microwave to re-heat.
