We all know that s’mores inspired recipes are a major hit in the summertime, and I am just as big of a fan as everybody else. You know what my favorite part of s’mores treats are? The ooey-gooey melty marshmallows. So the other day I was thinking about what else I could make with said marshmallows and the idea for these Rocky Road Brownies popped into my head. And boy am I glad that they did!! These brownies are so so chocolatey, have little walnut chunks for a beautiful texture, and they of course have the melty marshmallows. Plus they are made with much better-for-you ingredients. Truly fabulous! Also, my grandpa gave them a 10/10!!!!

What you need to make these Rocky Road Brownies!

As I said, these brownies are made with wholesome and healthy ingredients! For the marshmallows, I did use your classic marshmallow but there are definitely healthier options on the market if you are interested. The base of these brownies are gluten free, grain free, dairy free, and refined sugar free!

  • Almond Butter: The base of these brownies is almond butter! I love to use nut butter as the base of my healthy cookie and brownie recipes. I also find that almond tastes the best with chocolate!
  • Applesauce: Applesauce provides moisture and a little bit of sweetness to these brownies. It also replaces extra oil or butter!
  • Almond Flour: You guys already know, almond flour is my favorite gluten free flour! It makes for such a light and soft treat.
  • Coconut Sugar: I use coconut sugar in almost all my sweets! It is my favorite granulated refined sugar free sweetener to use.
  • Pure Maple Syrup: I also used a touch of pure maple syrup in this recipe! It is my favorite liquid refined sugar free sweetener.
  • Cocoa Powder: You of course need some cocoa powder to make your brownies all chocolatey and delicious!
  • Chocolate Chips: I use semi sweet dairy free chocolate recipes in basically all my recipes that involve chocolate, but use what you like and have on hand!
  • Walnuts: In order for these brownies to be rocky road we of course need some nuts. I went with chopped walnuts, but almonds would also work and taste delicious!
  • Mini Marshmallows: My favorite part of these brownies. The marshmallows! I used mini ones but you could also chop up the bigger size.
  • Lastly Eggs to bind, Vanilla Extract & Salt for some flavor, and Baking Powder for a little rise!

How to make these Rocky Road Brownies!

  1. Set the oven to 350 degrees.
  2. Combine the almond butter, applesauce, eggs, pure maple syrup, coconut sugar, and vanilla extract until smooth.
  3. In a separate bowl combine the almond flour, cocoa powder, baking, powder, and salt.
  4. Add the dry ingredients to the wet and combine.
  5. Mix in 1/2 cup of the chocolate chips and 2 tbsp of chopped walnuts.
  6. Pour the batter into a greased or lined 8×8 baking dish.
  7. Bake for 10 minutes.
  8. Remove from the oven and top with the mini marshmallows, chocolate chips, chopped walnuts, and a sprinkle of salt.
  9. Bake for another 5 minutes and then broil on high for 1-2 minutes. Keep an eye on them, the marshmallows burn easily!
  10. Let cool, cut into squares, and enjoy.

Description

Rocky Road Brownies are the best dessert, a true chocolate lover’s dream.  Full of rich chocolate, crunchy walnuts, and gooey marshmallows these brownies are sure to be your new favorite recipe.  Plus they are made with mostly healthy ingredients like almond flour, applesauce, and coconut sugar. Gluten free too!

Brownies

  • 1/2 cup almond butter
  • 1/4 cup applesauce
  • 2 eggs
  • 1/2 cup coconut sugar
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup + 2 tbsp almond flour
  • 1/4 cup cocoa powder
  • 1/2 cup dairy free chocolate chips 
  • 2 tbsp chopped walnuts
  • 1/4 tsp baking powder
  • pinch of salt

Toppings

  • 1/2 cup mini marshmallows (approximately)
  • 2 tbsp dairy free chocolate chips
  • 1 tbsp chopped walnuts
  • sprinkle of salt
