Healthy Peanut Butter Cup Brownie Bites
I’m sure my love for the peanut butter chocolate combination comes as no surprise to any of you! My favorite candy growing up was alway Reece’s peanut butter cups, so i’m truly not shocked that the love has transferred into a lot of my recipes. It’s just an irresistible combo! And let me tell you, these Healthy Peanut Butter Cup Brownie Bites combine the two flavors in pretty much the best way possible. These brownie bites are decadent, loaded with chocolate, perfectly soft & fudgy, and most importantly delicious. Trust me, you will be popping these cute little bites all the freaking time!
Lastly to top it all off, these brownie bites are made with healthy ingredients like natural peanut butter, almond flour, and coconut oil. They’re gluten free and can be dairy free too!
Ingredients needed for Healthy Peanut Butter Cup Brownie Bites…
These healthy brownie bites only call for a few simple and wholesome ingredients! They’re also completely gluten free and can be dairy free if you use these dark chocolate peanut butter cups.
- Peanut Butter: The base of these peanut butter cup brownie bites is of course peanut butter! I recommend using the runny, natural kind of peanut butter with only peanuts and salt as ingredients. 1/2 cup is all you need!
- Coconut Oil: Melted coconut oil helps to keep these brownie bites deliciously moist! You will need 1/4 cup of refined coconut oil. Make sure to use refined, as unrefined or virgin tastes like coconut and will leave your bites tasting like coconut as well.
- Coconut Sugar: As you all know, coconut sugar is my favorite sugar to bake with! It is refined sugar free and adds a rich flavor to any treat. 1/2 cup is the perfect amount for this recipe!
- Pure Maple Syrup: And pure maple syrup is my other favorite sweetener, also refined sugar free. Add 2 tbsp for just an extra touch of sweetness!
- Eggs: You will need 2 eggs here for binding and extra moisture.
- Vanilla Extract: Vanilla extract is always needed for that classic flavor. Add 1 tsp!
- Almond Flour: The use of almond flour in these healthy brownie bites makes them completely gluten free! 1/4 cup is all you need.
- Cocoa Powder: Add 1/4 cup of cocoa powder to these bites for all that chocolatey deliciousness!
- Baking Powder: 1/4 tsp of baking powder helps to bake this treat to absolute perfection.
- Salt: To balance out all the sweet in this recipe add a pinch of salt. 1/4 tsp to be exact!
- Mini peanut Butter Cups: You will need exactly 15 mini peanut butter cups to add to each one of these brownie bites. I used Reece’s but Justin’s is a great option too! If you use Justin’s dark chocolate peanut butter cups these entire brownie bites will be dairy free.
And that’s it … all you need for delectably delicious chocolate bites that are also a better-for-you treat! It’s a true win-win situation.
How to make Healthy Brownie Bites from scratch…
The best thing about these gluten free brownie bites is that they are super easy to make! You’ll have these fudgy peanut butter bites ready to devour in under 30 minutes.
- Set the oven to 350 degrees.
- In a large bowl start by combining the peanut butter, eggs, melted coconut oil, coconut sugar, maple syrup, and vanilla extract until smooth.
- Next add in the dry ingredients. Almond flour, cocoa powder, baking powder, and salt. Combine evenly.
- Then grab your mini muffin tin and grease or line.
- Add about tablespoon sized scoops of the batter to each muffin. You should be able to make 15 brownie bites.
- Bake for 10 minutes.
- Remove the brownie bites from the oven. Press down each bite with your fingers a bit and place a a peanut butter cup in the middle.
- Enjoy!
Kitchen tools you’ll need for these Gluten Free Brownie Bites…
The most important kitchen tool you need to make these brownie bites is a mini muffin tin! If you do not already have one here are some great options, a classic one and a fun silicone one that will make popping your brownie bites out a true breeze. A mini muffin tin is also great for loads of other recipes! I obviously love them for muffins of course, but also things like homemade peanut butter cups or egg bites. The result is always so cute … I mean come on, everything is better when miniature!
Besides the mini muffin tin you’ll pretty much need the basics! A mixing bowl and rubber spatula will work wonderfully.
How to store Peanut Butter Cup Brownie Bites…
You can store these healthy peanut butter cup brownie bites in an airtight container on the counter for about 5 days. If you want to store for longer, I recommend storing in the refrigerator where they will stay fresh for 1-2 weeks.
For even longer storage, keep in the freezer! I stash my treats in there for 1-2 months and just pop in the microwave whenever a chocolate craving hits.
