Ham, Swiss, & Broccoli Egg Bites
I present to you your new favorite easy and healthy breakfast! These little Ham, Swiss, & Broccoli Egg Bites are honestly so cute and so delicious. They are perfect if you’re on the go, which most of us actually aren’t these days, or even if you just want breakfast ready for you when you wake up! I’ve been wanting to make some sort of baked egg thing recently, but was too intimidated by a quiche or frittata. So i decided to make these bites in a mini muffin tin with a few simple ingredients. And it was incredibly easy to do! Don’t worry though I will work my way up to a delicious quiche one day!
What you need for these Ham, Swiss, & Broccoli Egg Bites!
- eggs
- red onion
- broccoli
- Swiss cheese
- ham
- olive oil
- salt
- pepper
I told you this recipe was simple! It literally only requires five simple ingredients. And also olive oil, salt, and pepper but those don’t really count as ingredients! The base of these egg bites is pretty obvious, eggs. Then we got our delicious add-ins! These have onion, broccoli, ham, and Swiss cheese and it is an absolutely delicious combo. But you could also totally throw in a different vegetable or swap in your favorite cheese if you’re not that big of a fan of swiss! These egg bites are totally customizable and always tasty!
How to make these Ham, Swiss, and Broccoli Egg Bites!
- Set the oven to 350 degrees.
- Chop the red onion, broccoli, and ham.
- Shred your Swiss cheese if it is not already shredded.
- Sauté the onion and broccoli on medium heat in the olive oil until softened. Also add in salt and pepper to your liking.
- Once the vegetables are softened add in the ham and continue to cook until a little crispy.
- Remove the mixture from the heat and set aside.
- Scrambled the eggs and mix in half of the Swiss cheese, salt, and pepper.
- Grease a mini muffin tin.
- Scoop a spoonful of the vegetable and ham mixture into each muffin.
- Add the eggs on top of the vegetables and ham to fill the muffins a little below full.
- Top each muffin with the remaining cheese.
- Bake for 15 minutes.
- Let cool, remove from the tin, and enjoy!
How to reheat these Ham, Swiss, and Broccoli Egg Bites!
Once you have made these egg bites, store them in the fridge. Then when you want to reheat them for breakfast or a snack or whenever you’re eating them, I recommend using a toaster oven or the microwave. I have been using my toaster oven and it works out perfectly, even crisps them up a little bit more! This is my favorite way of reheating them, but a microwave will work just as well if you do not have a toaster oven. I have only heated up one egg bite at a time in the microwave and 15 seconds works perfectly. You don’t want to heat them for too long because they are so tiny that they could get rubbery very quickly!

Description
These Ham, Swiss, & Broccoli Egg Bites are the perfect make ahead healthy breakfast! They are super quick and easy to make the first time and even easier to reheat. They are cheesy, full of veggies, and all around a delicious way to start your day!
Ingredients
- 6 eggs
- 1/2 cup chopped red onion
- 1 cup chopped broccoli
- 1/4 cup chopped deli/cold cut ham
- 1/2 cup shredded Swiss cheese
- 1 tbsp olive oil
- salt
- pepper
Instructions
- Set the oven to 350 degrees.

Notes
- To reheat these, use a toaster oven or microwave for 15 seconds. If you are reheating more than one egg bite at a time, you may need to add a few more seconds.
