Healthy Peanut Butter Cup Brownie Bites are deliciously cute and poppable!  Made with wholesome ingredients like natural peanut butter, almond flour, and coconut oil … these easy bites are gluten free & can be dairy free too.  This better-for-you treat will keep you coming back for more!

Instructions

  1. Set the oven to 350 degrees.
  2. In a large bowl start by combining the peanut butter, eggs, melted coconut oil, coconut sugar, maple syrup, and vanilla extract until smooth.
  3. Next add in the dry ingredients.  Almond flour, cocoa powder, baking powder, and salt.  Combine evenly.
  4. Then grab your mini muffin tin and grease or line.
  5. Add about tablespoon sized scoops of the batter to each muffin.  You should be able to make 15 brownie bites.
  6. Bake for 10 minutes.
  7. Remove the brownie bites from the oven.  Press down each bite with your fingers a bit and place a a peanut butter cup in the middle.
  8. Enjoy!
