Some of us are going back to school and others are just eating out less & at home more as life gets less busy. But either way quick & healthy dinner recipes are always good to have on hand. That’s why I’m bringing y’all this Chicken Apple Sausage Sheet Pan Dinner. I promise it will be a new favorite in your weekly dinner rotation!
Chicken Apple Sausage Sheet Pan Dinner is the perfect weeknight recipe and works great as meal prep too! This sheet pan meal is made with flavorful chicken apple sausage and maple roasted veggies & potatoes. It’s easy, healthy, and loaded with autumn inspired flavors. I know you’ll love it!

Ingredients needed for this Autumn Sheet Pan Dinner…
All you need to make this Chicken Apple Sausage Sheet Pan Dinner is a few simple & healthy ingredients!
- Chicken Apple Sausage: I love love love the flavor of chicken apple sausage! It’s juicy, smokey, and so dang delicious. You’ll need 4 sausages for this recipe! Here is the exact kind I used.
- Baby Potato Medley: This sheet pan dinner calls for a 24 oz baby potato medley. I mean who doesn’t love roasted potatoes! They’re crispy, yummy, and add a colorful touch to this dish.
- Baby Carrots: Add 1 cup of baby carrots to the sheet pan. You could also use regular carrots, but the baby ones are so convenient.
- Broccoli: Broccoli is the perfect green vegetable to add to this dish. You’ll need 1 large crown or 2 small ones!
- Pure Maple Syrup: 3 tbsp of maple syrup adds a sweetness & autumn flare to this easy dinner!
- Olive Oil: You will need olive oil to roast up the sausage, veggies, and potatoes. 3 tbsp to be exact!
- Seasonings & Spices: For all things flavor add garlic powder, onion powder, paprika, salt, and pepper to this recipe. You’ll need 1 1/2 tsp each of garlic & onion powder and 1/4 tsp of paprika. Add salt & pepper to taste!
How to make Chicken Sausage Sheet Pan Dinner…
This sheet pan dinner is super easy to make! Pretty much all you need is some chopping & roasting. But the best part is that you’ll only use one sheet pan and make a minimal mess. Gotta love it!
- Set the oven to 400 degrees.
- Then start by chopping the potatoes and broccoli. Slice the chicken sausage too.
- Toss the chopped potatoes and carrots with 2 tbsp olive oil, 1 tsp garlic powder, 1 tsp onion powder, the paprika, salt, and pepper. Spread on a large sheet pan. Roast for 20 minutes, mixing halfway through.
- While the potatoes are roasting, mix the chopped broccoli with 1 tbsp olive oil, 1/2 tsp garlic powder, 1/2 tsp onion powder, salt, and pepper.
- Remove the sheet pan from the oven. Move the potatoes & carrots to one side and spread the broccoli on the other side. Roast for 10 minutes.
- Remove the pan again, make room, and add the sliced chicken sausage. Roast for 20 minutes, mixing halfway through. I like to keep all the ingredients separate, but you could also mix everything together.
- Remove the pan once again and add the maple syrup to the broccoli, potatoes, and carrot. Add more salt & pepper as well. Mix everything and roast for the last 10 minutes.

- Use a large sheet pan! This recipe actually makes quite a bit of food, you’ll need either 1 large sheet pan or multiple smaller ones.
- Spread everything out & mix when instructed! These tips go together because they both ensure that all ingredients get cooked properly, evenly, and are able to crisp up a bit.
- Season to taste! I always add this as a tip. It may seem obvious, but it is actually very important. Everyone has different tastes so add the garlic powder, onion powder, paprika, salt, and pepper to your personal preference. You can even add in some different seasonings & spices!
- Prep your ingredients ahead of time! You could chop your vegetables, potatoes, and sausage ahead of time and then just roast up this sheet pan the night of. This is a total time saver and makes for the easiest of easy weeknight dinners.

Here are some ways to do it:
- Use different veggies! I thought broccoli and carrots worked perfectly with the fall inspired flavors here, but you can really use any vegetables you like.
- Swap in sweet potato! If you like sweet potato over regular potato throw that in instead. Such a simple swap.
- Different chicken sausage! I love the sweet chicken apple sausage used in this recipe, but if that’s not your thing add a different type of chicken sausage. Whatever is your favorite.
- Leave out the sweet! This kind of goes with the above bullet … I absolutely love the maple roasted veggies here, but if you don’t want the sweet just leave out this ingredient. It’s that easy.

Store this easy sheet pan dinner in an airtight container in the fridge. It will last for about 1 week!
This recipe actually works great as meal prep too. You can simply store in the fridge and then pop a serving into the microwave for lunch or dinner. Its the best!

Everything looks burnt. What did I do wrong?!
Possibly not enough oil. I find sometimes depending on the pan and oven you need more oil than the recipe calls for so everything doesn’t dry out and burn
