Sheet Pan Sausage & Peppers
I’m actually not sure if I have officially stated this on the blog yet, but I have been back in Boston and at school for about two weeks now! That means that I am no longer living with my family and am responsible for all my meals. Now don’t get me wrong, I absolutely love to cook but I am definitely starting to miss my mom’s home cooked meals!! Not only are they delicious, but they also mean that I don’t have to worry about cooking every night in order to have a tasty and satisfying meal ready for me to eat. If you are in the same boat, do not worry!!! Sheet Pan Sausage & Peppers are going to literally save you!!
This recipe is absolutely perfect to prep in the beginning of the week! It is super easy to make, all you have to do is some chopping, some seasoning, and then pop the tray in the oven. Loaded with vegetables, this colorful and healthy dinner is perfect to enjoy throughout the week when you are too busy to make dinner or just can’t be bothered! I also love this recipe because you can add a little variety to it. If you don’t like eating the same meal every night, you can switch up what you pair the sausage and peppers with. I went with brown rice, but you could totally do pasta, another grain, or even potatoes. Or no carbs at all!!!
What you need for Sheet Pan Sausage & Peppers!
- Bell Peppers: You are obviously going to need peppers for this recipe! I love to use a variety of colors, but you can totally use any color you like.
- Onion: I absolutely love the combo of peppers and onions, so that is what I did in this recipe. I was honestly going to call it Sheet Pan Sausage & Peppers & Onions, but then I realized that it just did not sound as good as Sheet Pan Sausage & Peppers ahaha!
- Tomatoes: I used grape tomatoes in this recipe and sliced them long ways! They go deliciously with the peppers and onions and the italian flavors going on in this recipe. I also think they add a little moisture to this sheet pan meal!
- Sausage: I used sweet Italian pork sausage. You could totally use turkey or chicken sausage if that is more your thing!
- Olive Oil: The olive oil coats the veggies, prevents sticking, and also adds to the “sauce” of the sheet pan meal!
- Spices: Italian seasoning, garlic powder, salt, and pepper.
How to make Sheet Pan Sausage & Peppers!
- Set the oven to 400 degrees.
- Slice the bell peppers, onion, and tomatoes.
- Straight on the pan (or in a separate bowl) combine the bell peppers, onion, tomatoes, olive oil, Italian seasoning, garlic powder, salt, and pepper. Mix around and coat evenly.
- Bake for 10 minutes.
- Remove from the oven and move the vegetables to the side of the tray. Place four sausages on the open side of the tray. (You could do more, my tray just couldn’t fit more!)
- Bake for 20 minutes.
- Remove from the oven and slice the sausage into 8ths. Mix everything around and spread evenly.
- Bake for another 10 minutes.
- Remove from the oven and enjoy! I recommend serving with brown rice and a sprinkle of parmesan cheese.
