Make ahead breakfasts, specifically oatmeal, and sneaking vegetables into recipes where you can’t taste them just might be my two most favorite things to do in the whole world. Very very bold statement and honestly they might not be my most favorite but they are pretty freaking high up there. And that is why I am absolutely in love with this Chocolate Chip Zucchini Bread Baked Oatmeal. This is the perfect meal prep breakfast recipe! It is deliciously sweet & chocolatey, loaded with healthy ingredients, has some added protein from protein powder, and has some super sneaky zucchini in there. Plus easy as heck to make!!!

What you need for this Chocolate Chip Zucchini Bread Baked Oatmeal?

This recipe basically uses all my favorite ingredients for a basic baked oatmeal, with the addition of some zucchini! Every ingredient is simple, healthy, and you most likely already have it in your house. These do use protein powder which is a little less common, but easy enough to get! I love using this vegan vanilla one.

  • Oats: We have to have oats! I always use old fashioned and did so in this baked oatmeal too.
  • Zucchini: We also have to have zucchini if we’re making a zucchini bread baked oatmeal! You simply shred the zucchini up, squeeze out the liquid, and mix in with all the other ingredients.
  • Vanilla Protein Powder: I love adding protein powder into my oatmeal bakes and even my stovetop oatmeal! I think it adds a wonderful flavor and sweetness, while also obviously adding a protein boost. I love this vegan vanilla one.
  • Almond Milk: I used unsweetened vanilla almond milk in this recipe, but you could really use any milk. Non-dairy or even dairy if you like!
  • Pure Maple Syrup: There is just a touch of pure maple syrup in this baked oatmeal to give a little sweetness. You could replace with a different liquid sweetener of your choice, such as honey!
  • Chocolate Chips: I always use dairy free semi sweet chocolate chips, but of course any chocolate would be delicious so use what you like and have on hand!
  • Lastly Cinnamon, Vanilla Extract, & Salt for lots of delicious flavor and Baking Powder for a little rise.
