Chocolate Chip Zucchini Bread Baked Oatmeal
Make ahead breakfasts, specifically oatmeal, and sneaking vegetables into recipes where you can’t taste them just might be my two most favorite things to do in the whole world. Very very bold statement and honestly they might not be my most favorite but they are pretty freaking high up there. And that is why I am absolutely in love with this Chocolate Chip Zucchini Bread Baked Oatmeal. This is the perfect meal prep breakfast recipe! It is deliciously sweet & chocolatey, loaded with healthy ingredients, has some added protein from protein powder, and has some super sneaky zucchini in there. Plus easy as heck to make!!!
What you need for this Chocolate Chip Zucchini Bread Baked Oatmeal?
This recipe basically uses all my favorite ingredients for a basic baked oatmeal, with the addition of some zucchini! Every ingredient is simple, healthy, and you most likely already have it in your house. These do use protein powder which is a little less common, but easy enough to get! I love using this vegan vanilla one.
- Oats: We have to have oats! I always use old fashioned and did so in this baked oatmeal too.
- Zucchini: We also have to have zucchini if we’re making a zucchini bread baked oatmeal! You simply shred the zucchini up, squeeze out the liquid, and mix in with all the other ingredients.
- Vanilla Protein Powder: I love adding protein powder into my oatmeal bakes and even my stovetop oatmeal! I think it adds a wonderful flavor and sweetness, while also obviously adding a protein boost. I love this vegan vanilla one.
- Almond Milk: I used unsweetened vanilla almond milk in this recipe, but you could really use any milk. Non-dairy or even dairy if you like!
- Pure Maple Syrup: There is just a touch of pure maple syrup in this baked oatmeal to give a little sweetness. You could replace with a different liquid sweetener of your choice, such as honey!
- Chocolate Chips: I always use dairy free semi sweet chocolate chips, but of course any chocolate would be delicious so use what you like and have on hand!
- Lastly Cinnamon, Vanilla Extract, & Salt for lots of delicious flavor and Baking Powder for a little rise.
How to make this Chocolate Chip Zucchini Bread Baked Oatmeal!
- Set the oven to 400 degrees.
- Combine the oats, protein powder, cinnamon, baking powder, and salt.
- In a separate bowl combine the zucchini, almond milk, vanilla extract, and maple syrup.
- Add the wet ingredients to the dry and combine evnly.
- Stir in the chocolate chips.
- Pour the mixture into a greased or lined 8×8 baking tray.
- Top with more chocolate chips, cinnamon, and a sprinkle of salt.
- Bake for 25 minutes.
- Let cool, cut into squares, and enjoy!
How do I re-heat this Zucchini Bread Baked Oatmeal?
This recipe is absolutely perfect as breakfast meal prep! I made this in the beginning of the week, stored in an airtight container in the fridge, and popped a square or two in the microwave for about a minute in the morning. So easy, so healthy, and so yummy! Top with honey, nut butter, and fresh berries for ultimate deliciousness.

Ingredients
- 1 cup zucchini, shredded
- 2 cups oats
- 1/4 cup vanilla protein powder
- 2 cups almond milk
- 1/4 cup dairy free chocolate chips
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 2 tsp baking powder
- sprinkle of salt
Instructions
- Set the oven to 400 degrees.
- Shred the zucchini with a cheese grater, measure out the cup, and then squeeze out the excess liquid. You can do this by wrapping the zucchini in paper towel and just squeezing.
- Combine the oats, protein powder, cinnamon, baking powder, and salt.
- In a separate bowl combine the zucchini, almond milk, vanilla extract, and maple syrup.
- Add the wet ingredients to the dry and combine evnly.
- Stir in the chocolate chips.
