Peanut Butter Cinnamon Swirl Apple Cake
Wow you guys what a freaking name. There just simply is no other name to give this delicious Peanut Butter Cinnamon Swirl Apple Cake. And trust me it is just as good as it sounds. This cake is absolutely perfectly fluffy and is bursting with my two favorite flavors to pair with apple, cinnamon and peanut butter! I mean literally what could be better?? This cake is actually a breakfast cake, not a dessert cake, and gives me major coffee cake vibes. This apple cake has just the right level of sweetness and pairs so so perfectly with some morning coffee! It is also delicious as an afternoon sweet treat. But let’s be honest, it is delicious at any and all times of day!!!

I think I forgot to mention the best part about this apple cake. It is made with all simple and healthy ingredients! It is also gluten free, dairy free, and refined sugar free. Good for you and crazy delicious!!!!
- Peanut Butter: The base of this apple cake is peanut butter! I absolutely love using nut butters as the base of my baked goods in place of butter or oil. Make sure to use a runny natural peanut butter!
- Apple: I used one small apple in this recipe! Peel and chop for the perfect taste of apple in each bite.
- Applesauce: We’ve got all things apple going on in this recipe! I love using applesauce to add some extra moisture and sweetness to my treats and in this case it also adds to the apple flavor.
- Coconut Sugar: The main form of sweetness in this cake comes from coconut sugar. It is one of my favorite refined sugar free sweeteners!
- Pure Maple Syrup: Another favorite sweetener of mine! Just a splash is used in this recipe.
- Oat Flour: I love love love to bake with oat flour! I am alway so impressed with the fluffiness it gives a treat. I make my own by simply blending oats until a fine flour forms, but you could also buy at the grocery store!
- Egg: For binding and moisture!
- Vanilla Extract, Cinnamon, & Salt for all things flavor and Baking Soda to get that perfect rise and texture!
How to make this Peanut Butter Cinnamon Swirl Apple Cake!
- Set the oven to 350 degrees.
- Combine the peanut butter, egg, coconut sugar, applesauce, pure maple syrup, and vanilla extract until smooth.
- Peel and chop the apple finely. Add to the wet ingredients.
- In a separate bowl combine the oat flour, baking soda, cinnamon, and salt.
- Add the dry ingredients to the wet and combine.
- Pour the batter into a greased or line 8×8 baking dish.
- Swirl extra peanut butter (1-2 tbsp) on top. Sprinkle extra cinnamon and coconut sugar too!
- Bake for 18 minutes.
- Let cool, cut into squares, and enjoy!

Ingredients
- 1/2 cup peanut butter (runny & natural)
- 1/3 cup coconut sugar
- 1 egg
- 1/4 cup applesauce
- 1 small apple, chopped

- 1 tbsp pure maple syrup
- 1 tsp cinnamon
- 1/2 tsp vanilla extract

The flavors were really good, but it was a little dry to me. Probably just my baking though lol

So yummy! The texture was a little crumbly for my liking, but I will definitely make this again with a few alterations! My husband adored it as well! I love how different this was from our regular peanut butter desserts.
