Description

Peanut Butter Cinnamon Swirl Apple Cake is going to be your new favorite recipe!  Made with oat flour, this apple cake is gluten free and perfect for breakfast or a snack.  It is light, fluffy, and absolutely delicious! dairy + refined sugar free


Ingredients

  • 1/2 cup peanut butter (runny & natural)
  • 1/3 cup coconut sugar
  • 1 egg
  • 1/4 cup applesauce
  • 1 small apple, chopped
  • 1 cup oat flour
  • 1 tbsp pure maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda
  • salt

Instructions

  1. Set the oven to 350 degrees.
  2. Combine the peanut butter, egg, coconut sugar, applesauce, pure maple syrup, and vanilla extract until smooth.
  3. Peel and chop the apple finely. Add to the wet ingredients.
  4. In a separate bowl combine the oat flour, baking soda, cinnamon, and salt.
  5. Add the dry ingredients to the wet and combine.
  6. Pour the batter into a greased or line 8×8 baking dish.
  7. Swirl extra peanut butter (1-2 tbsp) on top. Sprinkle extra cinnamon and coconut sugar too!
  8. Bake 18 minutes.
  9. Let cool, cut into squares, and enjoy!
