Sheet Pan Sausage & Peppers is the best easy dinner! Bursting with flavor, this recipe full of delicious vegetables and sweet Italian pork sausage, is also great for meal prep. Serve with brown rice, pasta, or the grain of your choice for a satisfying & healthy meal.

- 3 bell peppers
- 1 onion
- 1 cup chopped grape tomatoes
- 4 sweet Italian pork sausages
- 3 tbsp olive oil
- 1 1/2 tsp Italian seasoning
- 1 1/2 tsp garlic powder
- salt
- pepper
Instructions
- Set the oven to 400 degrees.
- Slice the bell peppers, onion, and tomatoes.
- Straight on the pan (or in a separate bowl) combine the bell peppers, onion, tomatoes, olive oil, Italian seasoning, garlic powder, salt, and pepper. Mix around and coat evenly.
- Bake for 10 minutes.
- Remove from the oven and move the vegetables to the side of the tray. Place four sausages on the open side of the tray. (You could do more, my tray just couldn’t fit more!)
- Bake for 20 minutes.
- Remove from the oven and slice the sausage into 8ths. Mix everything around and spread evenly.
- Bake for another 10 minutes.
- Remove from the oven and enjoy! I recommend serving with brown rice and a sprinkle of parmesan cheese.
