Single Serve Peanut Butter Cookie

This Single Serve Peanut Butter Cookie is the best easy & healthy dessert!  Perfectly soft & chewy and made with the chocolate chips of your choice, this cookie is completely gluten free and can easily be vegan.  It is a delicious treat ready in under 30 minutes!

Ingredients

Scale
  • 1 tbsp peanut butter
  • 1 tbsp refined coconut oil, melted
  • 1 tbsp pure maple syrup
  • 1 tbsp applesauce
  • 5 tbsp oat flour
  • 1 tbsp chocolate chips
  • 1/4 tsp baking powder
  • 1/2 tsp vanilla extract
  • salt

Instructions

  1. Set the oven to 350 degrees.
  2. Combine the applesauce, peanut butter, pure maple syrup, melted coconut oil, and vanilla extract.
  3. Add in the oat flour, baking powder, and salt. Combine evenly.
  4. Stir in the chocolate chips (I did white chocolate, but do dairy free if you need!)
  5. Transfer the batter to a small oven safe baking dish or bowl. Top with more chocolate chips, a swirl of peanut butter, and a sprinkle of salt.
  6. Bake for 13 minutes.
  7. Top with vanilla ice cream, a drizzle of peanut butter, and enjoy!
