Ingredients & Substitutions
This single peanut butter cookie is made with all healthy, wholesome, and simple ingredients. It is entirely gluten free and can easily be made vegan.
Plus the short ingredient list is full of pantry staples you most likely already have on hand. Here’s exactly what you’ll need to grab:
- Oat Flour: This recipe calls for 2 tbsp oat flour! I think this flour, made from the hearty whole grain, makes for perfectly soft and delicious baked goods. I make mine at home! Check out the Expert Tips section below to see how to do this.
- Peanut Butter: Duh! You can’t have a peanut butter cookie without peanut butter. You will need 1 tbsp of natural, creamy peanut butter. The ingredients should be just peanuts and salt!
- Pure Maple Syrup: Pure maple syrup is my go-to refined sugar free sweetener. All you’ll need is 1 tbsp. Alternatively, you could use honey or agave.
- Coconut Oil: 1 tbsp melted refined coconut will serve as the fat in this cookie. It makes it super rich and moist! Just make sure to use refined coconut oil. Unrefined or virgin coconut oil will make your cookie taste like coconut.
- Applesauce: I love to add applesauce to my peanut butter cookies for some extra moisture and sweetness! It also replaces extra oil or butter. Add 1 tbsp unsweetened.
- Chocolate Chips: This recipe is not only a healthy single serving cookie, but a chocolate chip cookie as well! I use 1 tbsp white chocolate chips. I just love their creaminess and sweetness. But you can use any chocolate chips you prefer.
- Lastly you’ll add 1/2 tsp Vanilla Extract and a pinch of Salt for all things flavor! Baking Powder too … to bake this single serve dessert perfectly.

How To Make This Peanut Butter Cookie For One
This single serve peanut butter cookie is incredibly easy to make, requiring only a handful of simple steps. You’ll only need about 20 minutes in total … 5 to prep, and 15 to bake!
It is the perfect healthy treat to make when a strong craving for dessert comes on and you simply can’t wait the hour needed for a full batch of your favorite peanut butter cookies to satisfy it.
Step 1: Heat oven. Set the oven to 350 degrees.
Step 2: Add the applesauce, peanut butter, pure maple syrup, melted coconut oil, vanilla extract, oat flour, baking powder, and salt to a mixing bowl. Combine evenly.
Step 3: Stir in the chocolate chips.
Step 4: Transfer the peanut butter cookie dough to a small oven safe baking dish or ramekin. Top with extra chocolate chips.
Step 5: Bake for 15 minutes.
Step 6: Serve & enjoy! Top with vanilla ice cream, extra peanut butter, a drizzle of white chocolate, and enjoy!

I find this this peanut butter deep dish cookie for one to be perfect as is! But to make sure it is perfect for each and every one of you – here are some of my variation ideas.
You can make substitutions or additions to meet your personal preference, taste, or needs!
- Peanut Butter: Don’t like that peanut butter flavor? No problem you can still enjoy this single serving treat. Just swap in almond butter or cashew butter. Allergic to nuts? Use sunflower seed butter.
- Chocolate Chips: The white chocolate chips in this cookie could be replaced with semi sweet chocolate chips, milk chocolate chips, or dark chocolate chips. Or you can leave out the chocolate entirely!
- Butter: I have not tested this, but I think 1 tbsp melted butter would make a fantastic replacement for melted coconut oil here. It would add such a rich and delicious flavor!
- Mix-Ins: There are so many additional ingredients you could mix into this deep dish cookie for one. Reese’s pieces would be my top choice! But other candies, crushed peanuts, or peanut butter chips would be fabulous options too.
Expert Tips
- Oat flour can sometimes be expensive or hard to find in the grocery store. That’s why I like to make my own at home! I actually recommend doing it. It is super easy! All you have to do is add oats, old fashioned or quick, to a high speed blender. Then blend until a very fine flour forms. You can also prepare oat flour in large batches so you have some on hand to make more oat flour treats – like Gluten Free Cinnamon Coffee Cake or Pumpkin Snickerdoodles.
- This cookie has a melt-in-your-mouth, ooey-gooey, delicious, slightly underbaked cookie texture. If you don’t like that (can you tell that I do?) then I recommend baking the mini deep dish cookie a little longer for a more fully baked texture.
- Make sure you are using refined coconut oil in your single cookie. Unrefined, or virgin, coconut oil tastes like coconut and if it is used in this cookie, the cookie will also taste like coconut.
Cookie Ramekin Serving Suggestions
My favorite time to bake and enjoy this one peanut butter cookie is in the evenings when my nightly sweet tooth hits. It’s the perfect after dinner treat or midnight snack for one!
Now that we’ve talked about when I enjoy this ramekin cookie recipe, let’s talk about how I enjoy it. The short and sweet answer is loaded up with toppings. But of course I provide more details!
Here are my favorite healthy single serve cookie toppings: (Some of them make it no-so-healthy anymore! SHH)
- Ice Cream: Is there anything better than a warm cookie fresh out of the oven topped with a big scoop of vanilla ice cream? I don’t think so! À la mode is certainly the way to go here. If you’re dairy free or vegan, just opt for a dairy free ice cream.
- Drizzle: It honestly doesn’t matter what I’m drizzling, I just know I like for there to be a drizzle here. Hot fudge, melted chocolate, peanut butter, caramel … whatever!
- Sprinkle: I also love to add a sprinkle of something fun. This could of course be chocolate or rainbow sprinkles! But a dusting of light brown sugar, cinnamon, and cocoa powder are a wonderful touch as well.
- Crunch: When it comes to toppings, I’m always looking for a bit of crunch to enhance the texture. This can come from crushed nuts, chocolate chips, or granola!
- Cream: Other options to add a bit of richness and indulgence to this dessert for one, besides ice cream, include whipped cream or just a splash of heavy cream. I think a flavored coffee creamer would be delightful too!
- Fresh Fruit: If you want to keep your toppings on the lighter side try fresh fruit. Sliced banana or mixed berries would be delish!
FAQs
In my humble opinion, this single serve cookie is a better-for-you dessert option for many reasons.
It is made with almost entirely wholesome ingredients – like natural peanut butter, unsweetened applesauce, oat flour, and coconut oil. This means it is full of healthy fats and complex carbohydrates!
It is also only lightly sweetened with pure maple syrup! Which is a refined sugar free sweetener that has a lower glycemic index, meaning it won’t spike your blood sugar as quickly. It also has more antioxidants and minerals than regular sugar!
The white chocolate chips make this cookie a little more indulgent, but you could opt for dairy free white chocolate chips if you follow that diet or low sugar white chocolate chips too to keep things lower calorie!
All in all, this peanut butter cookie is a healthier alternative than most classic peanut butter cookies!
To get the best results, yes I would use natural peanut butter! I have not tested this recipe with classic peanut butters, like Skippy or Jif, so I can’t guarantee it would turn out the same.
Additionally, I recommend using smooth peanut butter rather than crunchy or chunky peanut butter.
I use 8 oz ramekins to make this single serving peanut butter cookie. I like to use shallow and wider ones, rather than small and deep ones. Like these!
If you have deeper ramekins, like these, the baking time needed might be a little longer. But any small baking dish or even oven safe bowl should do the trick.
If you can’t make it through this giant peanut butter cookie in one shot, no worries! You can store leftovers in the refrigerator.
Simply cover the baking dish with plastic wrap or transfer whatever is left of the cookie to an airtight container. It will keep in the fridge for about 3 days!
If you know you will be saving some of this recipe for later make sure to only add certain toppings, like ice cream or whipped cream, to the portion you’ll be eating right away.

Hi! I used this recipe as inspiration. Here are the changes I made: I used olive oil in place of coconut oil, I replaced 1 tbsp of oat flour with pb powder, and I cooked it in the microwave (cooked it for 45 secs, then kept adding 10 sec until it was cooked (my finger didn’t sink into the cookie when I pressed on it). I haven’t given a rating as I don’t like doing that unless I have followed the recipe exactly.

I’ve tried reaching you in instagram a few times, no luck, so I’ll try this, Your recipe says ” This recipe calls for 2 tbsp oat flour!” Then later it says “5 tbsp oat flour”. Could you please, please say which one it is??? TWO or FIVE??? that’s a big difference.
