If you know me, you know oatmeal is one of my favorite breakfasts! Always has been, always will be.
I like it in each and every form too. Overnight oats, stovetop oatmeal, single serve, and everything in between!
I even like it with egg whites mixed in … don’t knock it ’til you try it.
But baked oatmeal has to be one of my favorite varieties of oatmeal! Because when you make it once, you don’t have to make breakfast for the rest of the week. Now that is what I’m talking about!
Baked Blackberry Oatmeal might just be my best work yet!
This healthy breakfast recipe is made with old fashioned oats, juicy berries, peanut butter, almond milk, and more wholesome ingredients. It is soft, chewy, sweet, simple, and delicious!
Plus prepared in one bowl in about 10 minutes, this recipe is as easy as can be. It’s high fiber, satisfying, and great to have on hand for busy mornings.

Ingredients
Blackberry baked oatmeal is made with all healthy, wholesome ingredients! You probably already have most of them on hand.
Whole oats, juicy blackberries, spotty bananas, nut butter, and maple syrup come together to make the best baked oatmeal recipe.
Ingredient Notes
- Blackberries: The star of this delicious recipe is fresh blackberries! The beautiful tart berry adds the best pop of flavor. You’ll need 1/2 a cup to mix in and more for on top.
- Mashed Banana: Ripe bananas add the perfect natural sweetness to this breakfast dish. Add 1 cup, which is about 3 bananas.
- Old Fashioned Oats: This recipe calls for 2 cups old fashioned rolled oats!
- Almond Milk: I always use unsweetened vanilla almond milk in my oatmeal recipes. Add 1 1/3 cup here.
- Nut Butter: Nut butter gives this recipe a creamy texture and rich taste. It also adds some healthy fats! I use 1/4 cup of peanut butter.
- Pure Maple Syrup: 1/4 cup pure maple syrup adds perfect level of refined sugar free sweetness to this oatmeal bake.
- Baking Powder: Add 2 tsp baking powder!
- Vanilla Extract: Add 2 teaspoon vanilla extract for that classic, sweet taste.
- Cinnamon: 1/2 tsp cinnamon adds a wonderful, warm flavor to these oats.
- Salt: Lastly add a pinch of salt, 1/4 tsp, to balance out the sweet!
Substitutions & Additions
There are a few substitutions and additions you could make to this recipe for it to meet your personal preferences, tastes, or needs!
Oats: I have not tested it, but I think quick oats could replace the rolled oats in this recipe.
Milk: I use almond milk here, but any milk would do! Like real dairy milk, coconut milk, oat milk, or soy milk.
Berries: You could swap out the blackberries for any other berry you’d like. Strawberries, raspberries, or blueberries would all be delicious. You could even try different fresh fruit … perhaps chopped peaches or cherries!
Nut Butter: Peanut butter could be replaced with almond butter or cashew butter if you’d like.
Mix-Ins: There are so many delicious mix-ins you could add to this recipe. Like shredded coconut, chopped nuts, dried fruit, or chocolate chips.

How To Make This Recipe
This healthy breakfast is super easy to make!
All it takes is 10 minutes of prep and some time in the oven and you’ll have a morning meal ready for the whole week.
Step By Step Instructions
Step 1: Set the oven to 400 degrees.
Step 2: Then add the wet ingredients to a large bowl – mashed banana, nut butter, almond milk, pure maple syrup, and vanilla extract.
Step 3: Combine thoroughly until smooth.
Step 4: Next add in the dry ingredients – old fashioned oats, baking powder, cinnamon, and salt. Combine.
Step 5: Stir in the blackberries.
Step 6: Transfer the oatmeal mixture to a large greased baking dish. Add extra berries on top and a sprinkle of cinnamon.
Step 7: Place the dish in the preheated oven. Bake for 35-40 minutes. The exact baking time will depend on the size of your dish. Just make sure the top of the oatmeal bake is solid to the touch.
Step 8: Remove the oatmeal from the oven. Let cool before cutting into squares.
Step 9: Add your favorite toppings and enjoy! I like to do peanut butter, fresh berries, and a drizzle of honey.

Use extra spotty and ripe bananas for the sweetest, best results.
Make sure to grease the casserole dish. This will make both removing the slices and cleanup so much easier!
Let the baked oatmeal cool and set completely before cutting into it. It may fall apart if you cut into it too soon!

I am making this right now. At the moment, the “large baking pan” isn’t really working out with the volume. I am going to recommend an 8×8 or 9×9 if you are only doing one batch. I’ll come back to report on flavor, etc. when it’s done baking. I was so happy to see the ingredients!!
