Blackberry Oatmeal Bake is an easy, healthy, and delicious breakfast recipe! - 1 cup mashed banana, about 3 ripe bananas
- 1/4 cup nut butter, (I do peanut butter)
- 1 1/3 cup unsweetened almond milk
- 1/4 cup pure maple syrup
- 2 tsp vanilla extract
- 2 cups old fashioned oats
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup fresh blackberries
Instructions
- Set the oven to 400 degrees.
- Then add the wet ingredients to a large bowl – mashed banana, nut butter, almond milk, pure maple syrup, and vanilla extract.
- Combine thoroughly until smooth.
- Next add in the dry ingredients – old fashioned oats, baking powder, cinnamon, and salt. Combine.
- Stir in the blackberries.
- Transfer the oatmeal mixture to a large greased baking dish. Add extra berries on top and a sprinkle of cinnamon.
- Place the dish in the preheated oven. Bake for 35-40 minutes. The exact time will depend on the size of your dish. Just make sure the top of the oatmeal bake is solid to the touch.
- Remove the oatmeal from the oven. Let cool before cutting into squares.
- Add your favorite toppings and enjoy! I like to do peanut butter, fresh berries, and a drizzle of honey.
