Description

Blackberry Oatmeal Bake is an easy, healthy, and delicious breakfast recipe! Made with fresh blackberries, ripe bananas, old fashioned oats, peanut butter, and pure maple syrup … these oats are simple, sweet, satisfying, and great for meal prep. Plus this recipe takes only 10 minutes to prepare. The whole family will love it!


Ingredients

  • 1 cup mashed banana, about 3 ripe bananas
  • 1/4 cup nut butter, (I do peanut butter)
  • 1 1/3 cup unsweetened almond milk
  • 1/4 cup pure maple syrup
  • 2 tsp vanilla extract
  • 2 cups old fashioned oats
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup fresh blackberries

Instructions

  1. Set the oven to 400 degrees.
  2. Then add the wet ingredients to a large bowl – mashed banana, nut butter, almond milk, pure maple syrup, and vanilla extract.
  3. Combine thoroughly until smooth.
  4. Next add in the dry ingredients – old fashioned oats, baking powder, cinnamon, and salt.  Combine.
  5. Stir in the blackberries.
  6. Transfer the oatmeal mixture to a large greased baking dish.  Add extra berries on top and a sprinkle of cinnamon.
  7. Place the dish in the preheated oven.  Bake for 35-40 minutes.  The exact time will depend on the size of your dish.  Just make sure the top of the oatmeal bake is solid to the touch. 
  8. Remove the oatmeal from the oven.  Let cool before cutting into squares.
  9. Add your favorite toppings and enjoy!  I like to do peanut butter, fresh berries, and a drizzle of honey.
