How To Remove the Brie Rind

The first step in preparing this whipped brie spread is removing the brie rind! I have seen some people say that it is easier to do this step if you are using a pie slice shaped brie cheese (IDK what it is actually called) rather than a wheel of brie.

However, I use wheels of brie and I find the process to be quite simple. Here are all my tips:

The first tip is the most important tip of them all! I recommend placing your cheese in the freezer for 20-30 minutes before you plan on removing the rind. Maybe even 1 hour beforehand. This will harden the cheese and make removing the rind SO much easier. Since brie is such a soft cheese, trying to remove the rind without freezing will be a difficult and sticky mess.

My next tip is to use a sharp knife! Simple, but key.

Now for the actual removal! Begin by slicing the rind off of the two flat circle sides. You could be super diligent here and try to get as close to the rind as possible to not waste any of that creamy dreamy brie. But I prefer to cut the rind clean off with a little bit of the cheese too! It is slightly wasteful, but way more efficient.

Lastly, place the brie wheel flat side down on the cutting board. Remove the rind around the edge of the wheel by slicing down in short lengths all around the circle. The circle will sort of become a hexagon or decagon in shape. Once the brie is bare, chop it up into chunks. Now you are ready to get whipping!

Don’t want to waste the leftover rind? No problem! Here are some creative ways you can put it to good use.

How to Whip Brie Cheese

Whipping brie seems pretty straightforward and it is! But there are definitely some tips and tricks you should know in order to get the best brie dip around. Here is everything you need to know:

First up, your brie cheese should be at room temperature before you whip. This is a little contradictory to my rind removal tips above, as I recommend your brie being frozen for this step. But it is not a problem! Simply remove the rind, chop the brie, and then let sit for 15-20 minutes to warm up to room temp.

Next, I whip my brie in a food processor and I find it to work wonderfully. That is also my area of expertise and what my following tips are for! However, you could whip the the soft cheese in the bowl of a stand mixer too. This would be my next choice! An electric mixer or hand mixer are great choices as well.

Add the brie chunks to the food processor. Blend on high for a few minutes. The cheese will most likely form a large clump before it eventually evens out and starts to look more like a dip. At this point, turn the food processor to low and blend until the brie becomes a soft, smooth, and creamy consistency.

I also recommend scraping down the sides of the bowl a few times throughout the blending process. This will make sure all the cheese gets incorporated. Lastly, have patience! The process will probably take several minutes, but in the end you will be left with a gorgeous whipped cheese.

How to Top Whipped Cheese

I think the delicious garlic butter herbs and honey topping here is what sets my brie cheese dish apart from all others. The combination of sweet, savory, rich, and herbaceous flavors is truly life changing! I promise you will take one bite and know exactly what I’m talking about.

Plus you only need about 5 minutes to make this wonderful topping and level up you appetizer game forever.

First, you will need to finely mince the garlic and fresh herbs. You could replace the fresh garlic here with jarred minced garlic if you would really like to, but fresh is always best! As for the herbs, use any you like. I use a combination of thyme, rosemary, and parsley. It is a divine trio!

Next sauté the garlic and herbs in a bit of butter on the stovetop. Do so over a low heat for just 1-2 minutes until soft, fragrant, and slightly brown in color. Then remove from the heat before any burning can occur.

Spread the creamy brie cheese onto a serving plate or add to a serving bowl.  I like to use a plate – it provides more surface area for toppings!

Add the buttery, rich sautéed garlic and herbs to the brie cheese spread. Make sure every inch of the cheese gets that yummy flavor! Lastly, finish off the dish with a generous drizzle of honey.

Recipe Variations

Now as much as love my garlic, herb, and honey variation of whipped brie appetizer … there are countless other ingredients you could use as toppings. Here are some ideas to kick start your own creation:

  • Hot honey or chili oil – For some spicy flavor!
  • Jam – Apricot or fig jam are classic brie pairings, but any of your favorite jams would be great.
  • Different fresh herbs
  • Caramelized onions or shallots
  • Crushed nuts – Pistachios, almonds, walnuts, or pecans!
  • Pesto
  • Roasted veggies or fruit
  • Bacon bits, prosciutto, or pancetta – Bring on the meat!

Okay, but seriously before you try all these fun and different variations promise you’ll at least give my exact version a try? You won’t regret it!!!

Serving Suggestions

Whipped brie with honey is an appetizer dream come true! I swear cheese aficionados will be bringing it to any and every gathering they attend. Or making a batch to themselves and eating it on the couch while binge watching Netflix! Both are respectable options.

How To Serve

Now that we’ve discussed how to prepare the ultimate cheese appetizer, we have to discuss how to best serve it. Here are my favorites:

  • Bread: Garlic bread, fresh crusty bread, toasted baguette slices (I add olive oil and salt to my slices and bake at 450 for 5-7 minutes)
  • Fresh vegetables: Cucumber slices, carrot sticks, snap peas … your classic crudités.
  • Crackers: Or pretzels!
  • Fresh Fruit: I think apples or pears would be a delicious sweet and crunchy vessel for brie dip.

When To Serve

  • Holiday Appetizer: Something about brie just screams the holidays to me! It’s the perfect way to start off your Thanksgiving feast or Christmas dinner.
  • Dinner Parties: Picture this dinner party spread … brie dip starter, Creamy Sundried Tomato (Marry Me) Chicken Pasta main course, and Rich Chocolate Tahini Brownies for dessert. Are you drooling yet?
  • Wine Night: Whether it’s a solo wine night, one with your girls, or one with your partner … this creamy brie with honey and herbs will go stupendously with your Sauvignon Blanc.

FAQs

Should I use double cream brie cheese or triple cream brie cheese?

You can use either double cream or triple cream brie!

They differ in their fat percentages. Double cream contains 60-75% milk-fat, while triple cream contains over 75%. Triple cream brie is thus even softer and richer than double cream! This means that if you use it in this recipe, your resulting whipped cheese will be super duper creamy.

However, both will work just fine! Double cream brie still results in an ultra creamy spread.

Can I use a different cheese?

Yes! The best cheese to use in place of brie is camembert. The two are very interchangeable!
Camembert is not as soft as brie, but it is still a creamy cheese that will work here.

You could also use feta, goat cheese, or ricotta in place of the brie. But you would have very different resulting dips!

Can I serve whipped brie warm?

Yes! Add the blended brie to a small baking dish, cover with aluminum foil, and bake at 350 degrees F until melty.

Remove from the oven and top with the sautéed garlic and herbs. Then add the drizzle of honey! YUM.

Can I prepare this recipe ahead of time?

I wouldn’t really recommend preparing this recipe too far ahead of time! It is simply most delicious when fresh. The whipped cheese sort of loses some of its lightness and creaminess once it is cooled in the refrigerator.

If you have to, you could prepare 1-2 hours in advance – perhaps right before your guests are about to arrive – and store in the fridge. Then remove from the fridge about 10-15 minutes before you’d like to serve so it can reach room temperature again. In that time you can sauté your garlic and herb topping so that it is super fresh and delicious!

Can I store leftover whipped brie?

You can, but it won’t be as good the next time you reach for it! Store in an airtight container and let sit at room temperature for a few minutes before enjoying.

Whipped Brie Cheese Spread with Honey & Garlic Herbs

  • Author: Kayla Berman
  • Prep Time: 25 Minutes

  • Yield: 5 Servings 1x
  • Category: Appetizer

Description

Whipped Brie is the best appetizer recipe you will ever have! Topped with honey and buttery garlic and herbs … this cheese spread is creamy, rich, flavorful, and melt-in-your-mouth delicious. Serve with fresh bread or crackers for a beautiful and impressive party starter that everyone will love.

Ingredients

Scale
  • 8.5 oz brie cheese
  • 1 tbsp butter
  • 2 tbsp chopped fresh herbs, (thyme, rosemary, parsley)
  • 3 cloves fresh garlic, finely minced
  • Honey

Instructions

  1. First, remove the rind from the brie cheese. See the full blog post for the best way to do it! Then chop the brie into chunks.
  2. Add the brie chunks to a food processor. Make sure they are at room temperature!  Blend on high for a few minutes. The cheese will most likely form a large clump in the food processor before it eventually evens out and starts to look more like a dip. At this point, turn the food processor to low and blend until the brie becomes a soft, smooth, and creamy consistency. Set aside.
  3. Add the butter to a small pan on the stove over low heat. Once melted, add the fresh herbs and minced garlic. Sauté for 1-2 minutes until soft and fragrant.  Remove the mixture from the heat once the garlic starts to brown a bit.  You’ll have to move pretty quickly because the garlic can easily go from the golden brown you’re looking for to burnt!
  4. Spread the creamy brie cheese onto a serving plate or add to a serving bowl.  I like to use a plate – it provides more surface area for toppings! Spread the sautéed garlic and herbs on top of the brie and add a drizzle of honey on top.
  5. Serve with crusty bread, crackers, fresh vegetables, and more. Enjoy!
