Tzatziki is a dip or sauce typically found in Southeast Europe and the Middle East. It is usually made of strained yogurt, cucumber, fresh cucumber, garlic, olive oil, and salt.
Tzatziki is often served as a cold appetizer or side dish with bread, eggplant, or zucchini.
My favorite way to remove the excess moisture from the cucumber for this recipe is to use paper towels.
First, I grate the cucumber finely. Then I wrap the grated cucumber in paper towel and simply squeeze out most, if not all, of the liquid.
Just be careful to not let any of the paper towel get mixed into the dip!
