Healthy, Lemony, Juicy, & Delicious Meatballs

I feel like we all think of ground chicken as the boring, bland, and dry version of ground beef. Or at least I do!

Ingredients

These flavorful meatballs are made with all healthy and simple ingredients! I’m talking lean chicken, salty feta cheese, fresh herbs, and delicious spices.

Meatball Ingredients

  • Ground Chicken: Lean ground chicken is the base of these meatballs! You’ll need 1 lb.
  • Feta Cheese: Crumbled feta cheese adds the perfect salty flavor and greek flare to this recipe. Add 1/3 cup.
  • Onion & Garlic: Onion and garlic provide such great flavor to these juicy chicken meatballs. Especially when minced finely and spread throughout perfectly! 1/2 a red onion and 3 fresh garlic cloves is great.
  • Olive Oil: You’ll need olive oil here to pan fry the meatballs. Just a little oil, 1 tbsp, should do the trick!
  • Fresh Herbs: Both fresh mint and fresh parsley are used here. 1/2 tbsp of each is needed!
  • Spices & Seasonings: These meatballs are bursting with flavor, thanks in large part to the spices and seasonings! Add 1 tsp dried oregano, 1/2 tsp salt, 1/4 tsp cumin, and 1/4 tsp black pepper for the best results.
  • Lemon: The zest of one lemon is the final touch that brings this recipe over the edge. It adds an unbeatable tang, lightness, and brightness. So dang good!

Substitutions & Additions

There are a few substitutions or additions you could make to this healthy dinner for it to meet your personal preferences, tastes, or needs!

Meat: These are of course chicken meatballs, but if you are not a fan of chicken swap in ground turkey or ground beef.

Fresh Herbs: Fresh dill, basil, and oregano would all be great additions to or replacements of the herbs already used in this recipe!

Spices: I love the spice blend here, but feel free to throw in some extras! Perhaps coriander, garlic powder, red pepper flakes, or dried dill.

Expert Tips

Chop and prepare the fresh herbs, onion, and garlic ahead of time. This will save you tons of time on a busy weeknight!

Use an actual measuring tablespoon to get even sized meatballs.

Use a nonstick pan. I always find this key for making the best pan fried meatballs! Otherwise sometimes the meatballs stick to the pan and fall apart when you try to flip them.

Let the pan and oil heat up thoroughly before adding the meatballs. This will achieve that nice and beautiful sear!

Serve this recipe with creamy tzatziki sauce!
